<p>我在去年 Hong Kong International Wine &amp; Spirits Fair 於 Tz 的展場上受他們的邀請，即場試了多個來自單桶原酒的樣本，我選了兩款個人喜愛的，給他們參考。當日 <a title="Ginger" href="https://www.facebook.com/barginger.hk/" target="_blank">Ginger</a> 的 Tony 亦有同場試飲，湊巧大家的選擇都是一致。一直到近日，他們傳來訊息，說根據 Tony 和我當日的意見，選了其中一桶原酒，作為香港專屬酒款。噢&#8230;.竟然!?</p>

<p>Tz 透露，這款香港專屬單桶 Tomatin 的酒標概念主題是"獅子山下"，以獅子山作為主題背景，由香港知名插畫家 <a title="Zoie Lam" href="https://www.facebook.com/Zlism/" target="_blank">Zoie Lam</a> 執筆，在她的 Zlism 星人"條條"跟他的朋友們一同遊走獅子山，酒標上顯現出獅子山的型態和香港大廈的面貌。我想，作為一個"真.香港人"，對獅子山下會有另一番的感情。所謂的新香港人是不會明白的，而忘本的香港叛徒的鼠目寸光亦只看到眼前的假像但卻看不見獅子山的遠大。</p>

<p>款酒是 Tomatin 酒廠正式裝瓶，並不是那些獨立裝瓶廠的包桶。很不錯的規格，年青的記年雪莉單桶原酒。老實說，雖則當天我是冒著爆 quota 的危險，盡量專心的去品飲，但我始終只是凡人，沒有那些甚麼達人或專業品飲家的神奇本事，在會場上百款酒每款酒匆匆只嘗一兩口便可寫出<del datetime="2018-08-23T01:34:32+00:00">罐頭</del>專業品酒文下結論。當然，中年癡呆的我現在亦不會記得當天品嘗的細節。要寫好酒評，當然是要喝已正式裝瓶的酒吧。</p>
<p>很明顯 Tz 會送給酒我，但了解我的朋友都只道我不太愛吃魚，尤其是淡水魚，例於鱔魚等。所以呢，我跟他們說我朋友很有興趣要買一瓶，這一定要收錢的吧。面書上"人帥真好"這些閃光帖與我可不太有緣，我還是老老實實用真金白銀買一瓶來好好品賞，認真撰寫酒評吧!</p>
<p>唔&#8230;.這瓶酒是我這窮酒鬼用血汗錢買的，不好喝的話可不要怪我筆下無情哦!</p>
<p>氣味: 牛奶朱古力, 玫瑰花水, 檀木，焦糖，拖肥，蜜餞梅子，混有丁香的香料<br />
口味: 黑朱古力，咖啡，檀木，皮革，煙草，岩鹽，乾果皮， 丁香<br />
餘蘊: 中等長度，咖啡渣，烤木頭，香料<br />
評語: 氣味濃郁，起首是牛奶朱古力的甜美氣味，帶些許玫瑰花水氣息，深沉的檀木香氣，甜蜜的焦糖拖肥。雖則酒精度達 ABV 60.7%, 但沒有刺鼻感，非常喜歡那牛奶朱古力和檀木的香氣。酒體強壯有力，帶點火，口味上沒有氣味上的甜，轉為皮革煙草的男人味，帶些丁香的辛辣和微咸。中等長度的餘蘊，甘苦適度，舒適。整體上結實豐厚但不過重，口味上有些菱角，就複雜度和層次感，以這年青的酒來說，絕對是交足功課有餘。</p>
<p>酒質確實不錯，又可以行善積德，大家"真.香港人"為獅子山下香港精神打打氣吧!</p>

<p>前文介紹過 Archives 及"海鮮"酒標，分享了一套由 Archives 和<a title="人上人實業" href="http://www.facebook.com/arentradingtaiwan" target="_blank">人上人實業</a>聯合挑選的三桶 Springbank 同年蒸餾同年裝瓶威士忌中桶號 106 與桶號 551 的酒評。現在介紹的是 551 姊妹桶的 550桶，酒標上的是 Rosy-mouth Murex，是骨螺的一種，外形很美麗，亦有一個美艷的中文名字 &#8211; 玫瑰唇骨螺 (國立臺灣海洋大學 -海洋教育數位典藏)。</p>

<p>氣味: 蜂蜜，紙皮，橙皮果醬，岩鹽，菸草，朱古力，香料<br />
口味: 烤木頭，菸草，黑朱古力，微鹹，橙皮果醬，乾柑橘皮，甘草<br />
餘韻: 悠長，烤木頭，咖啡渣，藥草，西藥粉<br />
評論: 氣味上非常近似桶號 551，但較為濃郁，亦較重香料味和鹹，不過兩者基調幾近相同。口味方面，較厚亦焦香，亦鹹些和苦些。餘韻亦相近但較重。一對姐妹(兄弟)，_起來幾近相同，都是適合有癖好人士，只不過是一位重口味，另一位更重而已。</p>

<p>Archives 是一個建立於 2011 年的荷蘭威士忌裝瓶廠品牌，他們的威士忌近年大受港台飲家的歡迎，其"海鮮"圖案招紙可算是招牌。Archives 和同是來自荷蘭的威士忌資訊平台 Whiskybase 關係密切。Whiskybas.com 建立於 2007 年，目標成為世上最大的威士忌資訊平台，近年則開拓成為威士忌買賣平台。正所謂大家都是台，不同分得那麼細，對嗎?</p>
<p>Archives 威士忌的定位，就如其名，存真，"ARCHIVES stands for taste, quality and unadulterated nature"。那就喝一喝他們的威士忌，看看有多原汁原味。</p>

<p>這是一款來自 <a title="春岸 Springbank" href="http://www.sippingmalt.com/2012/12/10/springbank-10/" target="_blank">Springbank</a> 的威士忌，雪莉 Sherry 桶陳，記年單桶中女，每一單項市場上都極受歡迎，溝埋做瀨尿牛丸，不用先看大師達人等的酒評也會被搶購吧。</p>
<p>再說多一點，這款酒是 Archives 和 Michael 兄的<a title="人上人實業" href="https://www.facebook.com/arentradingtaiwan" target="_blank">人上人實業</a>聯合挑選三桶 Springbank 威士忌的其中一桶瓶裝。另外，酒標上的那海螺圖是有來頭的，酒的背標寫道是取自 G. Perry 的 &#8220;Museum of Nature History" 一書中的 Bulimus Zebra 圖像。我翻閱過資料，這 &#8220;Museum of Nature History" 其實是來自一位英國建築師兼業餘博物學家 George Perry 於 1810年 1月 至 1811 年9 月期間刊出的 &#8220;The Arcana, or the Museum of Nature History" 月刊 。而這 Bulimus Zebra 海螺的圖像，確切點來說，是同一作者於 1811 年倫敦出版的 &#8220;Conchology, or The Nature History of Shells" 中 plate 30 內的插畫。</p>

<p>氣味: 舊蜜糖，烤碳，蜜餞梅子，微鹹，菸草，拖肥，藥草，塑膠<br />
口味: 烤木材，蜜糖，菸草，黑朱古力，蜜餞梅子，乾柑皮<br />
餘蘊: 悠長，黑咖啡，烤木頭，焦油<br />
評語: 香氣濃厚，有燒碳，煙草,藥草和丁點塑膠還要帶點鹹的男人味，背後有討人歡喜的甜美蜜餞梅子和拖肥。酒體厚實，還是炭燒木材，菸草朱古力和蜜餞梅子的元素，卻又多了些清潤蜜糖和甘苦的乾柑皮。悠長的餘蘊，偏焦香帶苦，未算過火。一款口味較重的威士忌，雖然焦苦但不難受，尚有其他的甜美元素平衡，可以說是威士忌中的健力士。濃郁豐富不過膩，好喝，好酒。</p>

<p>這一桶酒是上人米高兄所選，先在老啤酒桶陳了四年，之後轉到雪莉桶繼續陳年。酒選了後，上人預見要多點火候才達最高酒質，要求才陳多點時間才裝瓶。不過在 TWA 老闆嚐過後也大為欣賞，在商議後决定由 TWA 裝瓶，分散於多個地區發售，以求公諸同好。</p>
<p>那真的要喝喝看這款只有十一年陳非主流產區的過桶威士忌，為甚麼會有那麼大的魅力可以打動兩位酒業的老闆了。</p>
<p>氣味: 舊蜜糖，糖薑，蜜餞梅子，拖肥，皮革，檀木<br />
口味: 蜜餞梅子，檀木，咖啡，麥飽，蜜糖，辛香料<br />
餘韻: 悠長，乾果皮，烤木頭<br />
評價: 糖薑氣味非常明顯既甜且辣，酸中帶甜的蜜餞梅子伴隨點點的拖肥，輕輕的皮革和幽香的檀木接續。酒體結實，多了些帶辣的辛香料和焦香味道。悠長的餘蘊，帶辛辣和木質等的微苦，留些韻味。十分平衡的香氣，豐富具層次，甜中帶酸，有辛香料的調味，幽香檀木和皮革增添韻味，辛辣和焦香木質於口味上較多了些，但不過火，耐嚼。一款很不錯的雪莉桶陳風味的年青威士忌，一流的氣味表現，雖則口中多了些辛辣和焦苦，但不過火，是一種對其他味道的調劑。很好喝，上佳的好酒。</p>

<p>前文介紹了來一款來自<a title="瑞士泥煤威士忌 Säntis Malt Dreifaltigkeit Peated" href="http://www.sippingmalt.com/2017/01/18/santis-malt-dreifaltigkeit-cs-peat/" target="_blank">瑞士的泥煤風味威士忌</a>，雖則是常規版，卻是桶裝濃度，正是原汁原味重口味。</p>
<p>現在介紹同廠的一款小批次版，這款酒是 Säntis Malt 的台灣代理<a title="人上人實業" href="https://www.facebook.com/The-Whisky-Agency-%E4%BA%BA%E4%B8%8A%E4%BA%BA%E5%AF%A6%E6%A5%AD%E6%9C%89%E9%99%90%E5%85%AC%E5%8F%B8-ARen-Trading-Co-Ltd-358347530945186/" target="_blank">人上人實業</a>選桶的，較特別的是標示用 Smoky Cask。雖則只有二百瓶，但酒標只示為小批次，這實在有點奇怪。有心寫文章分享心得的，和"抄考"乞 Like 騙人氣的就是不同，我就直接向人上人上人，即是 Michael 謝大哥盤問&#8230;.不，是查證，原來這的確是單桶瓶裝。那 smoking cask 又是甚麼呢? 原來是重度烘烤的老啤酒桶。</p>
<p>有趣的產區，有趣的酒桶，有趣的"小批次"單桶，值得喝吧!</p>

<p>氣味: 燒過的紙張，蜂蠟，精油，乾花，雪梨乾<br />
口味: 焦炭，藥草，煙肉油脂，烘焦咖啡，焦糖<br />
餘蘊: 悠長，焦炭，咖啡渣<br />
評語: 有趣的氣味，首先是神前燒黃紙，接著到 spa 店蜂蠟精油，最後再到花茶店。酒體結實，更仍焦炭，多了煙肉油脂，焦炭味道延續到悠長的餘蘊。除了燒焦味外，氣味和口中的表現有很大分別，前者可以想像成一位塗上香水的女士的休閒下午，後者則是爐火旁工作的麻甩佬。這款酒，果然有趣，飲得過。</p>

<p>繼續分享格蘭多納 GlenDronach 的酒評。這次介紹的，是一款來自台北美麗信花園酒店的選桶。</p>
<p>GlenDronach 20 years, 1993/2013, C# 36, 700 ml, 59.3%<br />
OB for Miramar Garden Taipei 台北美麗信花園酒店</p>
<p>我不是旅遊達人，甚至乎出國外遊的機會也甚少，當然對這家酒店是一無所知，在網路上看了看，據聞是一間頗受日本遊客青睞的酒店。同系還有一家新竹美麗信花園酒店。</p>
<p>這台北美麗信花園酒店包桶的 36 號桶多納聽聞市面能見度不高，價格亦較高，這也難怪的，這是人家酒店包桶的耶。我喝的很名顯是樣本，是我單方面認作的老友送的，多謝。</p>
<p>氣味: 舊冬蜜，麥炙中藥，黑棗，拖肥，黑朱古力，粗鹽<br />
口味: 舊冬蜜，蜜餞梅子，黑茶，柑橘皮，黑咖啡，藥草<br />
餘蘊: 悠長，烤木，炭燒咖啡，藥草<br />
結論: 起首有點酒精感，有點老舊氣息，甜中帶甘醇，未後有一點鹹味。酒體厚實溫潤，醇和雋永，偏向甘苦，餘蘊悠長，更為甘苦，但不刺喉。整體甚佳，複雜具層次，氣味濃香甜美不過膩，有草本及甘苦作平衡，尤愛溫潤的酒體，口味和餘蘊稍甘香焦苦，耐嚼。要挑剔的是藥草的苦味稍過了少許，但不過份，整體評價是正斗之作。</p>
<p>有病呻吟: 很多時人是很現實的，你對人家有利用價值的話，當然會稱兄道弟，面書見 post 速回見字即 like，不時要約聚會享樂，但你變得無大價值的時候，不要說人家還會視你為老友，連一聲招呼也沒有。會有真心無利益關係的朋有嗎?會有的，但絕少，遇上了，要珍惜。不過可惜的是，人總是不懂得珍惜，只知予取予攜，沒有感恩之心。人皆如是，我亦如是，唯常自省，冀免沉淪。</p>

<p>This tasting note is about GlenDronach again. This GlenDronach is rather special which is a selected cask by Miramar Garden Taipei.</p>
<p>GlenDronach 20 years, 1993/2013, C# 36, 700 ml, 59.3%<br />

Cask: Oloroso Sherry Butt<br />
Distilled: 15 January 1993<br />
Bottled: December 2013</p>
<p>I am not a &#8220;professional traveler" and in fact I seldom go traveling. I have no idea about this hotel but got some information from the Internet that this Taipei hotel is welcomed by Japanese tourists. There is a Miramar Garden Hsinchu in the same league.</p>
<p>This Glendronach cask 36 is exclusively bottled for Miramar Garden Taipei that eventually this whisky is rarely seen in the market and price is fairly high. Needless to say what I tasted was a sample bottle from a friend of mine.</p>
<p>Nose: aged honey, honey baked Chinese herb, black date, toffee, dark chocolate, raw salt<br />
Palate: aged honey, preserved plum, black tea, citrus peel, black coffee, herb<br />
Aftertaste: Long, charred wood, toasted coffee, herb<br />
Comments: On nose a bit alcohol attack in the beginning, scent of aging, sweet yet bitterness, little salty at end. Solid and warm at palate, rich, trend to toasty, even toasty in long aftertaste but not irritated. Overall performance very good, complex and layered, rich and adequate sweetness, balanced by herbal and soft bitterness, lovely smooth and solid body, much more toasty and lingeringly. Just a bit overly bitterness of herb if picky to say. It is indeed a very good whisky.</p>

<p>這篇簡單酒評要介紹的，是一瓶徐代書先生選桶的格蘭多納 GlenDronach。Keeper of the Quaich <a title="GlendDronach 個人精選桶" href="http://www.sippingmalt.com/2013/09/05/glendronach-10-years-2002-c2010/" target="_blank">徐代書先生</a> 不用再多介紹了吧，他多年前送了一瓶標緻的樣本給我，我一直留著未有開來喝。這與酒的價錢無關，只是對友情的價值看法。幸運地早前有朋友送了同一款酒的樣本給我，這樣本是來自他們主辦的"<a title="兩地威士忌品飲交流 – 徐代書 Keeper of the Quaich 與香港威士忌愛好者" href="http://www.sippingmalt.com/2015/06/29/hk-tw-whisky-tasting/" target="_blank">兩地威士忌品飲交流會</a>&#8220;，當晚作導賞主講的，正正就是代書兄，真巧哦!我 終於可以喝到這款酒之餘，亦能繼續保留這份記念品，多謝各位。</p>

<p>氣味: 乾薑, 蜜餞梅子, 葡萄乾, 柑橘, 朱古力, 菸草, 肉桂<br />
口味: 舊蜜糖, 蜜餞梅子, 拖肥, 咖啡, 糖薑, 煙燻箱, 香料<br />
餘韻: 中等長度, 烤木材, 咖啡渣, 香料<br />
結論: 微酸的柑橘和梅子氣味於前，繼而是優質的朱古力，乾薑添加些香辣氣息，點點的菸草，肉桂類香料結尾。酒液入口令人聯想起黏結的舊蜜糖和拖肥, 微辣帶甜的糖薑與複合香料添加韻味, 還有煙燻木盒的味道。中等長度, 稍苦和焦香的餘韻。氣味上有明顯帶酸的新鮮和蜜餞水果，酒液入口則導入蜜糖和糖果的香甜, 香料和木質平衡酸甜, 尾段梢焦苦但不算過份。整體豐富及複雜, 表現具層次, 甚佳的威士忌。</p>

<p>東亞酒造的羽生蒸溜所在1946年建立, 2000年遇上經營危機, 賣廠易手。買家決定關廠及棄掉倉儲的四百桶威士忌。羽生蒸溜所後人伊知郎Ichiro, 集資買回羽生的原酒, 及後在歐洲推出啤牌系, 大放異彩。</p>
<p>執了笠的羽生和輕井澤的高質素威士忌, 飲一支少一支, 在港日台市面已難尋縱影。近來的拍賣價亦屢創新高。幾千萬的畫作, 幾十萬的威士忌, 當然是好東西。不過當中有很大部份是用來買歷史, 背景, 話題, &#8220;品味", &#8220;型格"。<br />
身為一個庸俗的飲家, 當然找一些關門廠的酒來自我感覺良好一下。</p>

ABV 55.1%</p>
<p>Nose: 片糖, 夏枯草, 八角, 煙灰, 黑色香草橡皮糖, 焦木, 燒檀香, 燴蕃薯<br />
Mouth: 甜, 濃厚, 煙薰, 乾木, 炒栗子, 提子乾, 烤多士<br />
Finish: 中短, 炒栗子, 夏枯草, 烤多士</p>
<p>大致感覺是秋日的炒栗子檔, 栗子在黑糖沙中滾動的味道。<br />
13年陳雪利桶, 主調鮮明, 以焦糖系甜香為中心。配以烤木, 乾草, 非常迷人~~<br />
香味細緻, 夏枯草, 八角, 香草橡皮糖等獨特風味, 為焦香增添更多個性。<br />
可惜餘韻比較短, 在口中的焦香很快就離開了。而香氣偏重焦木香, 略欠平衡。<br />
透過SWMS總算一探羽生的神秘面紗, 這單桶有個性, 香味豐富細緻。雖欠平衡, 但飲獨立裝瓶廠(IB)單桶酒的, 平衡不是一個考慮吧。不過餘韻短就比較可惜了&#8230;..</p>
<p>總體而言, 131.2是一支好酒, 香味特別! 但羽生單桶的價錢非比沉常, 有機會的話一試無妨~~</p>

<p style="text-align: left;">金車是<span style="font-size: 13px;">一間在1979年成立的飲料和食品</span><span style="font-size: 13px;">公司，於宜蘭縣員山鄉建立"金車威士忌酒廠", 開始釀造台灣自行磨碎、糖化、發酵、蒸餾、熟成、調配的威士忌。於2008年年底推出噶瑪蘭威士忌。</span></p>
<p>水質是威士忌好壞的重要因素，宜蘭位於山海交界處，75%是山區，為一座自然生態大水庫。金車採用中央山脈與雪山山脈的清淨水源。再從蘇格蘭購入蒸餾器和引進先進的技術，打造產能至一年900萬瓶的大規模酒廠。</p>
<p>受著威士忌之神的眷顧 ，2011年金車宜蘭威士忌酒廠奪下國際烈酒大賽IWSC的最佳蒸餾廠大獎。 2012年金車宜蘭威士忌酒廠被英國《威士忌雜誌》（WHISKY MAGAZINE）遴選為世界百大酒廠。標準酒和原桶酒更在國際舞台獲獎無數, 大放異彩!</p>
<p>10年不到的年青蒸餾所, 賣著不標年份的年青威士忌, 憑藉理念：＂酒質 = 蒸餾技術 + 氣候 + 橡木桶＂打破年份高才是好酒的迷思。陳年無疑是一個成本，年份愈高，成本一定愈貴。部分的人會以威士忌的年份和獎項來判定威士忌的好壞，以及應該付多少錢。對品飲威士忌而言，年份和獎項，其實只是一個參考。好飲與否，沒有絕對，最終取決於閱歷和口味。</p>
<p>寒帶國家與亞熱帶國家的氣候對威士忌熟成有著很大的影響，高緯度的寒帶威士忌因為產地氣候寒冷，熟成所需時間相對拉長；而位於亞熱帶氣候的國家，其氣候較炎熱相對所需熟成時間大大縮短。相對地，炎熱地區橡木桶內酒液和酒精流失(angel share)亦高很多，放超過１０年的原酒可能已經流失了大部份了。。。所以金車提出「勿以年份論英雄：這正是因為要提年份一定要跟產地氣候相提並論才能產生正確的意義，假設一瓶寒帶國家15年的威士忌 與一瓶亞熱帶3年的威士忌放在一起時，單純用年份判斷品質者就會直覺的認為15年高於3年，而未將亞熱帶的熟成環境列入考量。」高年份是賣點，當然要大大隻咁印係ＬＡＢＥＬ上。３年酒，不提也吧。</p>

<p>今次介紹的是Kavalan Sherry Cask Solist 雪莉桶原酒，年份大約是３年吧。</p>

<p>氣味: 嫩薑, 烏梅, 夏枯草, 嘉應子, 柑橘, 忌廉, 芒果, 香蕉</p>
<p>口味: 油感豐厚, 甘甜, 苦澀, 乾木, 提子乾, 陳皮, 檀木, 香蕉, 椰棗</p>
<p>餘韻: 悠長, 淮花, 麥茶, 肉桂, 夏枯草, 山渣, 酸梅湯</p>
<p>總結：酒體強勁, 油感豐厚, 入口先香甜後苦澀。酒色深到苦荼咁色，口感也如先甘後甜的濃縮中藥。<br />
無論聞香或口中，氣味都非常強烈，層次豐富, 黑果木質味道為主軸，還帶有點點香蕉芒果等熱帶果香!<br />
餘韻悠長, 竟然出淮花味同烤麥香, 好似飲完啤酒咁~~~</p>
<p>剛剛打開的這支雪莉桶原酒，香味未能完全發揮。但開瓶後放２至４星期後，香味漸漸鬆綁，不用加水，都可以完滿地表現層次。這是一支味道非常濃烈，豐富的些利桶原酒。喜歡高ＡＢＶ，重些利的我而言，絕對是上佳之作。</p>

<p>近年在台灣機場免稅店有售Sherry, Bourbon, Vinho原酒，價錢都只是港幣幾舊，絕對是抵飲之選！！而獲獎無數的Fino都有得賣，不過就比以上３支貴出一倍了～～～</p>
<p>Kavalan酒廠建立短短幾年就躍升至世界級數，水準高之餘，價格相而（台灣價）。去開（有朋友）台灣，不妨買支Solist原酒一試!!</p>
