				<content:encoded><![CDATA[<p>去年2018年麥卡倫的新酒廠開幕，開啟了一連串的宣傳活動，同時亦推出了些新酒款，現在要介紹的這一款威士忌，就是為新酒廠開幕的贈興酒款。</p>
<p>麥卡倫御黑 Macallan Aera</p>
<p>說得精準一些，這新酒款是乘新酒廠開幕而推出，初期主要是提供于台灣的"夜場" &#8211; 各位可不要想多了，所謂"夜場"其實即是餐廳酒吧而已。當然，每款酒的背後都有些理念的，但這些故事每個字詞每句句子雖則看得懂，但看個後卻又說不出個所以然來，還是不要 copy and paste 了，有興趣的可看看其他網絡文章，很多達人都有轉載吧。又這些媒體也一股腦兒煞有介事很認真地介紹這款酒所陳年的木桶，如橡樹來自美國和西班牙啊，木材要風乾四年啊，製成桶後要灌雪莉酒陳兩年啊，媽媽是女人啊&#8230;..云云。</p>
<p>又說回這款酒的週邊一二事，那會看成是 AREA 又或是 ARENA 的 AERA 話說是源自拉丁文，就是英文的era 的意思，即是新酒廠的開幕標誌著開啟新的一頁，很感動囉。另外，這款"御黑"的包裝在很多人眼中看來，又的確算是很型格的，黑中有銀之餘銀中又帶黑，不過呢，藝術這事宜我真係識條鐵，還是喝酒好了。</p>
<p>Macallan Aera, 700 ml, 40%</p>
<p>氣味: 乾棗, 雪梨乾, 紅蘋果, 拖肥, 麥包, 咖啡渣<br />
口味: 拖肥，多士，肉桂，烤木頭，蜜糖，藥粉<br />
餘韻: 中等長度，烤木頭的焦苦，藥粉<br />
評價: 令人愉悅的甜美氣息作開端，接著有乾和新鮮水果的香氣，些許糖果和烘焙麵包，帶焦香的咖啡渣，算豐富單流於平面，感覺上是混在一起卻是各自表達。酒體稍輕，柔軟，也是甜蜜作開端，但隨後轉為烤炙的味道，末後有我討厭的西藥粉苦味，延續至餘蘊之上，雖然輕微，但就是黏在牙齦上，算是我個人的敏感和偏見吧!一款直接易喝的威士忌，要果有果要甜亦有甜，有焦香亦有烤木平衡，算豐富但不令人留下深刻印象，層次感和融和度稍欠。整體上可以的，工餘良伴，淨飲加冰兩相宜。</p>
<p>後記: 忽然想起很久沒有喝麥卡倫的入門版十二年陳了，現在要多少錢一瓶呢?</p>

<p>麥卡倫 Macallan Edition 系列的酒評終於倒數回到起點 &#8211; Edition Number One 了。之前喝過了麥卡倫 Macallan Edition 系列的第二至第四版，每個版本也有其個別風味，實在好奇Macallan Edition 系列的首發 Edition Number One 是風味會是如何的。</p>
<p>麥卡倫 Macallan Edition 系列的源起，按麥卡倫的官方說法，就是要慶祝和體現麥卡倫的橡木桶管理，從原材料到木桶成品，展現出橡木桶工藝對威士忌風味的影響和貢獻。其實產品背後有甚麼故事也只是個宣傳點子，產品在市場上大賣才是商家最關注的事，我個人對 Macallan Edition 的市場看法，有興趣的讀者可參看前文"<a title="麥卡倫 Macallan Edition No. 4" href="http://www.sippingmalt.com/2018/10/03/macallan-edition-4/" target="_blank">Macallan Edition No. 4</a>&#8220;，於此不贅。</p>
<p>說回這於 2015 年推出的 Macallan Edition One，根據官方介紹，說是由麥卡倫的首席調酒師 Mr. Bob Dalgarno 操刀，挑選來自八種不同類型橡木桶陳年的原酒調配而成。這八種橡木桶包括:</p>

<p>看起來是歐洲橡木桶佔了大比數。那，喝起來會分得出來嗎? 這，我可沒本事喝得出來，還是留待那些專業品飲家甚麼的看圖作文吧。我還是老老實實的我手寫我喝的好了。</p>
<p>Macallan Edition No. 1, 700 ml, 48%<br />

<p>氣味: 蜂蜜，糖薑，帶點焦的麥包，烘焙穀物，拖肥，甘草糖<br />
口味: 麥包，菸草，木衣櫃，咖啡，蜜糖，烤炙甘草<br />
餘韻: 中等長度，木質，多士，黑茶<br />
評語: 氣味上開始頗甜，隨後來些帶辣仍是甜的糖薑，有些帶焦香的烘焙穀物平衡，未後還是拖肥，帶些甘草的清涼感。 口味上沒有氣味上的甜，多了些焦香，木材等草本的味道，算是結實。中等長度的餘韻，輕軟舒服的焦香麵包和草本焦苦。綜合而言，起首雖稍甜，但緩緩的趨於烘焙，穀物，木質和草本，其風味演化未有做成突兀感。一款不是大鳴大放，但結構四正，風味展現具有層次的威士忌。</p>

<p>麥卡倫的 Master Blender Bob Delgarno 邀請了一間非常出名的西班牙餐廳 El Celler de Can Roca (不要問我這餐廳有甚麼出名，我只是一名窮宅男，你問那些飲食及旅遊達人吧)的主持人三兄弟，從他們作為餐飲業人士的觸覺，各自挑選了一些不同類型酒桶陳年的原酒，經由 Bob Delgarno 調整下，便造就了麥卡倫 Macallan Edition No. 2 的誕生。</p>

<p>起菜上碟! 好了，這瀨尿牛丸的滋味會是如何的呢?</p>
<p>Macallan Edition No. 2, 700 ml, 48.2%<br />
Code: C4.V372.T21.2016-002</p>
<p>氣味: 玫瑰花茶，拖肥，生薑，蜜餞梅子，柑橘皮，乾木材，肉桂<br />
口味: 糖薑，木材，鉛筆屑，乾柑橘皮，拖肥，甘草，肉桂<br />
餘蘊: 中等長度，乾木頭，多士，乾柑橘皮<br />
評語: 起首很幽香的花茶香氣，接著是香甜的拖肥和蜜餞，帶辣的生薑，清香的柑橘皮，繼後是乾木材和香料，香甜氣息隨後更明顯。中等酒體，先迎來甜中帶辣的糖薑味道，帶點"糠"的木質類味道隨後而來，有些甜甜的拖肥點綴，也有好些香料。 中等長度的餘蘊輕軟的木質和果皮苦味。這麥老二有木質味道主導，但仍在適度範圍，未過火位。不是令人難忘的酒，但喝起來也算豐富怡人，很不錯的假日威士忌。</p>

<p>麥卡倫 Macallan Edition No. 3 是於 2017 年發行，顧名思義是這系列的第三版。Macallan Edition 每一版都會有一個特色主題，第三版的主題就是香氣。</p>
<p>香氣是品賞威士忌的重要一環(廢話來的，何只是品賞威士忌，氣味是所有飲食的重要元素吧)，Macallan Edition 這第三版要強調這一環，便邀請了一位行內知名(我想當然)的調香大師 Master Perfumer <a title="Roja Dove" href="https://en.wikipedia.org/wiki/Roja_Dove" target="_blank">Roja Dove</a> 合作。其實這位香水師和 Macallan 是老相好來的了，他們早於 2010 年便曾經合作開發了一套聞香工具，The Macallan Aroma Box &#8220;The Macallan with Roja Dove"，即是類似葡萄酒界所用作學習訓練的酒鼻子。今度他們於 Macallan Edition No. 3 再聯手，以香氣作主題，雙方都應該駕輕就熟，成果應該會有保證。</p>

<p>在分享酒評前，也說一說些有趣的東西吧。Macallan Edition 就每個版本都會有一行密碼，前文 <a title="麥卡倫 Macallan Edition No. 4" href="http://www.sippingmalt.com/2018/10/03/macallan-edition-4/" target="_blank">Macallan Edition No. 4</a> 我就這密碼借周星馳電影中的達聞西，與及小說和其改編同名電影 &#8220;The Da Vinci Code" 的中文譯名"達文西密碼"開了一個爛 gag (破梗)。</p>

<p>但經讀者指教後，我不敢再做次了。這次認真的介紹這聞西密碼&#8230;.sorry~認真的，是 Macallan Edition code。就這 Edition No. 3 的 code，其解密於下:</p>
<p>Code: C6.V523.T23.2017-003</p>
<p>C6： Cask，C6 就是用了6款不同種類的橡木桶;<br />
V523：桶量，共 523 桶;<br />
T23：Macallan 酒色第23號，數目越大酒色越深;<br />
2017：生產年份，2017 年<br />
003：Macallan Edition Number，這版本就是 003 Edition No.3</p>
<p>還有，這 Macallan Edition No. 3 當然又是限量發行的，聽聞發行量是 250,000 瓶&#8230;.250,000 瓶?! 這叫限甚麼量&#8230;.</p>
<p>好了，真的喝酒吧!</p>
<p>氣味: 乾花，花蜜，玫瑰花茶，梨子，無花果，冰花橙糖，拖肥冰花橙糖，拖肥<br />
口味: 蜜糖，拖肥，烤木材，柑橘皮，麥包，牛油糖，辛香料<br />
餘蘊: 中等長度，咖啡渣，烤木材，香料<br />
評語: 幽香的乾花和芳香的白色鮮花，接著是梨子汁和淡淡的無花果香，一口花茶，配些清甜的冰花橙糖和帶點焦香的拖肥，淑女們的秘密花園。酒體結實，又花果樂園轉往烘焙餅房，添加了些烤炙木質和辛辣的香料。中等長度的餘蘊，延續烤炙木質和香料的味道。不知是否知道是有香水大師參與的原因，先入為主的覺得香氣真的很有香薰的感覺，是花果的精華，不過倒沒有了麥卡倫的風味，到入口轉回威士忌的熟悉味道。香氣的確誘人，整體亦豐富，就是喝起來有些平舖直敘的感覺。好喝的，紳士淑女在燭光晚餐上喝一兩杯也很浪漫吧。</p>

<p>麥卡倫 Macallan 以優質橡木桶自豪，以往最為人稱道的當然就是傳統西班牙雪莉桶，但到西班牙雪莉桶供不應求而價格也大幅上漲後，麥卡倫的自豪也不得不轉一轉方向，開發了 <a title="麥卡倫之變節" href="http://www.sippingmalt.com/2010/05/03/macallan-18-fine-oak/" target="_blank">Fine Oak</a> 系列，去符合成本和滿足市場需求。當然，麥卡倫對所謂的市場需求，就是量，不一定是飲家的願望需求。Fine Oak 系列的酒款，其實是很不錯的，但老飲家還是鍾情於西班牙雪莉桶的麥卡倫，需知道情意結這事兒，是不能用客觀常理去解釋的。但現實上是你有你大道理要西班牙雪莉桶，麥卡倫卻玩桶越玩越多花樣。大品牌就是有能奈玩宣傳做教育領導市場，套用某超英趕美泱泱大國高官的邏輯，正所謂大家都是橡木桶，不用分得那麼細。到了今天，只要是麥卡倫，只要含有雪莉桶，管它是量產客製浸潤充填桶，一樣就是大賣，正是大家都是雪莉桶，不用分得那麼細。</p>
<p>麥卡倫的確是很高的，雖則已經成功俘虜普及市場的大眾飲家，但也不忘所謂的高端飲家。所謂的的高端飲家，就是要與眾不同，才能顯示出他們的高。喝威士忌，要喝記年單桶原酒，要酒標詳列資料，與人論酒才能侃侃而談，顯示出他們對酒的淵博學識。但要喝麥卡倫的話，要喝記年單桶原酒? 不用我說吧，很尷尬的，不要再說了&#8230;.</p>
<p>話說麥卡倫於 2015 年推出了一款新酒，但看其名字，應該是一個系列吧。</p>
<p>Macallan Edition No. 1 &#8211; 很簡單直接的名字，就是麥卡倫 Macallan，就像真正的富豪名人，如果他們有名片的，簡單地印上大名和秘書的聯絡就行，不需像那些漏夜趕科場的半紅不黑半吊子那樣，連幼稚園整潔獎也不放過，天花亂墜掛上上百的名號吧。</p>
<p>說回 Macallan Edition No. 1，很明顯會有後續，No. 2，No. 3，No. 4&#8230;.直到永遠，阿門。果然，這 Macallan Edition 往後每年一造，到了今年第四年發行到 Edition No. 4 了。</p>
<p>Macallan Edition 開宗明義就是要玩桶，還要是無遮多 P 大滙! Macallan Edition 不像市場上眾多大品牌(包括自己)對橡木桶的身世諱莫如深，只輕輕帶過，如甚麼 Traditional Cask 等。相反，Macallan Edition 於酒標和包裝盒上有詳列所用到的各種桶型，還有各類桶陳原酒的調合比例，如以最新的 2018 年版 Macallan Edition No. 4 為例，在包裝盒上詳列所使用的木桶如下:</p>

<p>連各類桶陳原酒的調合比例也公開，Macallan Edition No. 4 的就是 42% Butt，40% Hogshead 和 18% Puncheon。</p>
<p>資料這麼複雜透明的麥卡倫，限量不用說了，還要是模擬桶裝濃度的 ABV 48.4% 酒精度，看起來既高級又專業，高階飲家應該滿意了吧。要在其他人面前論酒，不用花記年單桶原酒的酒價，卻又有更多的話題，用心點的，去谷歌那些桶匠的資料，也像那些甚麼專頁網站到 Yotube 或外語網站鸚鵡學舌的讀出桶匠名字的"正確"西班牙發音，便何以"桶匠語言學專家"自居，之後隨便在網上找些"吸睛"的圖片，配上幾句"你知道嗎?在非洲每喝一瓶酒，地星上便會出現一個空酒瓶"等的深度文，發上去面書，總會有一羣"長輩圖"級數的人，會施惠 like 及轉發。市場上的好些速成專家達人，就是這樣練成的吧。</p>

<p>還是說回這 Macallan Edition No. 4。這麼多的不同酒桶類型，意欲為何呢? 我綜合了多個資料來源，姑且看看吧!</p>
<p>Tevasa European oakhogshead 賦予乾果和木質香料<br />
Tevasa European oak butts 和 puncheons 給予薑的元素<br />
Jose Y Miguel Martin European oak butts 提供乾棗的味道<br />
Diego Martin Rosado European oak butts 則是無花果<br />
Vasyma American oak hogsheads 便是雲尼拿(香草)，拖肥糖和牛油糖(奶油糖)<br />
至於那 Second Fill European and American oak 的 Butts 和 Hogsheads 添加些柑橘的味道。</p>

<p>氣味: 出爐麥包，柑橘，柑橘皮，新鮮蜜糖，乾果，乾木頭，香料<br />
口味: 蜜糖，拖肥，烤木材，烘焙咖啡，焦糖，岩鹽，乾柑橘皮<br />
餘韻: 中等長度，烘焙穀物，烤木材，拖肥，香料<br />
評語: 很熟悉的麥卡倫氣味，對我來說就是那出爐麥包的香氣。清新帶點微酸的柑橘，仲有D橙皮添(還有些橙皮呢)，背景是帶乾燥感的木材氣息，帶甜的蜜糖和漿果乾潤澤，末後有些複合香料。酒體結實，帶甜的蜜糖，明顯的烤炙和木材味道，液態的岩鹽焦糖拖肥，有些苦中帶芳香的乾柑橘皮。中等長度的餘韻，主要是焦香和木質味道，喉底黏了點拖肥，些許香料作結。氣味甚佳，各種香氣紛陳，口味上以烤炙和木質主導，尚有其他元素平衡，餘韻亦算適度。喝起來好像很豐富，烤木材有點突出，尚有些菱角，整體而論，純粹以酒評酒，不理會那些雜音，這 Macallan Edition No. 4  倒還有 Macallan 的本色亦算好喝，但不是那種令人一喝難忘的酒，當然，亦不要看現時的市場價吧。</p>

<p>香港本地酒專 <a title="The Rare Malt" href="https://www.theraremalt.com/" target="_blank">The Rare Malt</a> 的中環店於今天開張。甚麼祝賀大展鴻圖等的門面話不用說了，用心專業酒好價靚當然會生意興隆，奉承R著數也好(如我之流)，又或葡萄眼紅中傷也好，也改變不了不日專家 Dickson 敲鑼的事實的，對吧?</p>
<p>說得太遠了，還是說回主題吧。The Rare Malt 早前有一款和台灣酒業名人黃敏恭先生合作推出香港限定的 <a title="The Rare Malt x 虎之選 x GlenDronach" href="http://www.sippingmalt.com/2017/03/07/glendronach-24-years-1992-c95/" target="_blank">The Rare Malt x 虎之選 x GlenDronach</a>，口碑甚佳。為配合<a title="The Rare Malt Central Shop" href="https://www.facebook.com/theraremaltct/" target="_blank">The Rare Malt 中環店</a>的開幕，他們推出了一款 The Rare Malt 選桶的威士忌，同日首發。這款酒由選桶到酒標設計都是他們團隊一手一腳，每個細節都精挑細選，親力親為的精心傑作。好了，花錦鱔也吃過了，說回這款酒了。</p>

<p>Glentauchers 是 Speyside 的酒廠，早於 1898 年開始投產，其命運一如大多數的酒廠，其間被人買買賣賣，在 1985 年於 United Distillers (即現今 Diageo 的部份前身) 的手上被休停。 Allied Distillers 於 1989 買下 Glentauchers，翌年復產，之後一直在 Pernod Ricard 麾下至今。 Glentauchers 的原酒聽聞絕大部份用於調和威士忌 Blended Whisky 之用， 早期原廠有發行過十二年陳和二零零零年取代為十五年陳，其餘間見於市場的單一麥加威士忌瓶裝都是<a title="獨立萬歲" href="http://www.sippingmalt.com/2011/03/09/independent-bottler/" target="_blank">獨立裝瓶廠(Independent Bottler, IB)</a> 的出品。說起其相關的調和威士忌，已知主要的有 Ballantine&#8217;s 和 Teacher&#8217;s。前者於兩三年前先於免稅店發行了一套三款的 Ballantine&#8217;s Single Malt Whisky，提供其不同特色風味的其中三種核心原酒，全部都是十五年陳 40% ABV，分別是 floral with a hints of spice 的 Miltonduff，fruity with honeyed sweetness 的 <a title="破舊立新" href="http://www.sippingmalt.com/2012/07/26/glenburgie-1983-c9800-bbr/" target="_blank">Glenburgie</a> 和 citrus with soft berries 的 Glentauchers。</p>
<p>老毛病又發作，又說遠了，這次真的只說回主題的了。這款 The Rare Malt 的 Glentauchers 選桶瓶裝的原酒是 1996 年蒸餾，波本桶陳，今年裝瓶，足二十一年陳。聽聞在地星上舉足輕重的威士忌酒界中，雪莉派門徒對波本門近期的"眾人皆醉佢最醒十瀆一清流"的攻勢正處於掙扎中。其實，我既不是達人或甚麼專業品飲家，這些浩瀚的宇宙級威士忌酒界風潮，與我無關，這只是我自己的維園呀叔瘋言瘋語罷了。我一向不理會甚麼潮流理論，酒的所有詳情資料是必須要知道的，這樣才能了解學習到從酒的養成和風味的關係，但只要是要品賞的酒，我便只以個人感觀去品味酒的本質，不會有特別喜好的桶型，不會有最喜愛的酒廠，亦不會有鍾愛的口味，就是如此簡單直接的去品飲。</p>
<p>雖然聽說這款酒的包裝和酒標是很精美，但我其實未有見過成品的，當時拿了樣本中的樣本，為示虔誠，直到昨天才擇到吉時開喝。(你吹夠了吧&#8230;.)</p>
<p>氣味: 忌廉(奶油)，柑橘皮，雲尼拿(香草)，燒綿花糖，牛油(黃油)，爆谷，配烤火雞的小紅梅醬，隱隱的香料<br />
口味: 橙皮果醬，乾木頭，咖啡渣，清蛋糕，椰子脆片，包含丁香等的辛香料<br />
餘蘊: 悠長木質微苦，雲尼拿<br />
評價: 一聞酒香，就如令人有置身於戲院之感，熟悉的牛油爆谷洒上檸檬皮抹的雲尼拿雪糕，還有烤綿花糖，小紅梅醬令人期待隨後的烤火雞聖誕大餐，充滿愉悅的香氣，末後有些辛香料，平衡過甜的感覺。酒體結實，沒有氣味上的豐富和香甜，較重木質和香料，亦有些甜點潤飾。悠長的餘蘊，輕軟的木質苦味，帶些雲尼拿味道調劑。這是一款上佳的陳年波本桶陳的威士忌，波本桶陳賦予的香氣味道，豐富而不過於濃重; 陳年培養出溫婉融和的酒質，值得去慢慢細味。這不是一款大鳴大放，予人味覺冲擊的主流口味的威士忌。老友間飯後小聚，無論是麻甩佬間的家事國事天下事，又或是淑女間的輕聲軟語細說閨房妙事，這款酒都是上佳的催化劑 (當然，淑女也會聊世界大事，男人老狗也可分享閨房樂，無性別定型又或歧視的，OK?)。</p>

口味: 焦炭，蜜餞梅子，朱古力，皮革，肉桂，煮過的蜜糖，藥草，微鹹<br />
餘蘊: 悠長，焦炭，藥草<br />
評價:很明顯的焦炭氣味，微酸的烏梅帶來清新感，優質朱古力，點點的多重香料。酒體厚實，口味主要延續氣味，多了些皮革和煮過的蜜糖，末後帶點微鹹。餘蘊悠長，帶焦炭和藥草焦苦。氣味可以，酒質入口，結實濃郁，入口味道算豐富，和餘蘊一樣的偏重焦木味道。雖則有些梅子和蜜甜點綴，對我個人口味來說，整體上那焦木元素是過重，平衡和層次感不足，小酌一兩小杯倒還有趣的。這款酒不用理會我這等業餘淡友酒評，單看深沉的顏色和雪莉桶陳原酒，再計入那必殺傳言，應該會受市場歡迎。</p>

<p>麥卡倫 Macallan 的威士忌真的很有話題性，有人會對她指指點點，不是說她巧立名目不斷推出新酒款賣高價，就是批評她酒質不比從前說只有喝過舊的才算喝過麥卡倫，云云。世事真奇妙，正是你有你鄙視，我有我熱賣，就如麥當奴一樣，總有一大批捧場客。正所謂大家都是"麥記"，不用分得那麼細。</p>
<p>早前在<a title="The Rare Malt" href="https://www.theraremalt.com/" target="_blank">相熟酒行</a>，靚仔店主倒了一杯威士忌給我，我隨意的喝了兩口，很不錯哦! 味道豐富結實四正。查問之下才知道是 Macallan Classic Cut，看那名字，初初還以為是甚麼 Amber Sienna 之類的系列酒款。我可不是甚麼達人又或那些專業品飲家，沒有本事不管環境個人狀態有異能短時間內喝多款酒也可"寫出"專業酒評，所以我只好厚面皮<del datetime="2018-01-03T07:12:32+00:00">買</del>拿些樣本回去，齋戒沐浴更衣後才專心品飲吧。窮人事忙亦善忘，直到近日才找到機會品飲及完成酒評。</p>
<p>Macallan Classic Cut Limited 2017 Edition, 750 ml, 58.4%</p>
<p>開宗明義 Limited 2017 Edition，雖則說又是限量，但據聞有九萬瓶，不知是限甚麼量。另外這是 2017 版，很明顯如果這一版買得好，就自然會有 2018 版，2019 版&#8230;.直到永遠。 根據背標介紹 &#8220;Exclusively matured in hand picked sherry seasoned oak casks from Jerez, Spain" Oh my goodness! 全程雪莉桶哦! 顏色深又是疑似桶裝濃度，一定大受"雪莉派"門徒歡迎，更受<del>炒家</del>投資者熱捧吧!。麥記還算老實，雖則說是雪莉桶陳，但也明言是 &#8220;Sherry seasoned oak casks"。當然了，不然，你以為一直以來會有那麼多動輒 Solera since 18XX 的雪莉桶提供給眾多威士忌酒廠嗎?</p>
<p>也順帶一提，我喝的這款酒是 750 ml 容量的瓶裝，主要市場應該是美國和北美一帶吧。</p>
<p>言歸正傳，好，喝酒去!</p>
<p>氣味: 舊冬蜜，蜜餞梅子，焦糖，拖肥，肉桂，提子，多士，丁點的西藥粉<br />
口味: 舊冬蜜，烤炙藥草，咖啡，麥包，肉桂，帶些月桂葉的混合香料<br />
餘韻: 悠長，烤木頭，咖啡渣，藥草<br />
評價: 氣味豐富，一堆甜東西，焦糖餡的拖肥糖沾些陳年冬蜜，幸好有些香料和焦香氣味平衡，烘焙麵包的香氣提醒你她的穀物出身，有點點的藥粉氣息，不反感。酒體結實，稍膩的冬蜜，烤炙過的藥草和咖啡焦苦，末後一些香料調味。餘韻悠長，更是焦香和帶木質草本的微苦。很好喝的麥記，豐富厚實，是多了些稜角，但整體上表現很不錯，好酒。</p>
<p>後記: 早已說過我近年已很少留意酒界的人和事，我直到近日才知道，無分西洋還是華文圈，有好些威士忌達人和專業品飲家等將這 Macallan Classic Cut 和"千金難買早知道"的 <a title="簡單直接的麥卡倫" href="http://www.sippingmalt.com/2012/08/13/macallan-10-years-cask-strength/" target="_blank">Macallan Cask Strength</a> 相比較，甚至直接推論這 Classic Cut 是麥卡倫用來取代 Cask Strength，用以延續其<del datetime="2018-01-04T07:57:09+00:00">炒賣</del>投資神話。洋洋千字，字字珠璣，正反立論&#8230;.看過後令人有重回少年歲月的感覺哦! Yeah! 各位學生時代有參加過校際辯論比賽的吧! XDDD</p>

<p>Recently, the Taiwan exclusive whisky bottlings are getting popular amongst whisky connoisseurs. The rich favors and package design with Chinese elements attract not only the local Taiwan customers, but also win the appreciation of other Asian and even the western markets.</p>
<p>The Taiwanese market is mature and big enough to sustain a stable still growing status quo that allows the presence of many of these exclusive bottlings. Many people see Taiwan as a whisky paradise in Asia.</p>
<p>Whisky is becoming a trend in Hong Kong in recent years. The growth of &#8220;true" connoisseurs and collectors is very significant by which can be peeked from some activities, such as the lively whisky auctions and keeping on new opening of whisky specialist shops and bars, for examples.</p>
<p>Though the market size of Hong Kong cannot compete to Taiwan and Japan by now, she has good potential. Some Hong Kong whisky connoisseurs have already owned their exclusive casks, for purposes of personal interest, collections, group members &amp; etc. Here is one of the examples, an exclusive cask for a Hong Kong newly established whisky specialist shop, <a title="The Rare Malt" href="https://www.facebook.com/theraremalt/" target="_blank">The Rare Malt.</a></p>

<p>Amazingly this new whisky shop can partner with Mr. Tiger Huang who is a famous whisky industry practitioner in Taiwan. This exclusive cask bottling is allowed to bear the brand &#8220;Tiger Selection" which represents the reputation of Mr. Tiger Huang. The whisky itself is a well aged 24 years old single malt from GlenDronach. It is not easy to acquire such an old cask at present as in the fact that the insufficient supplies of mature stocks that the most distilleries prefer to retain the old casks for their own use.</p>

<p>Sample from a friend of mine and I further tasted it again at the shop direct from original bottle.</p>
<p>Nose: Dried ginger, condensed milk, toffee, cinnamon, clove, sandalwood<br />
Palate: Dried ginger, dark coffee, toasted wood, cinnamon, clove, herb, brown sugar<br />
Aftertaste: Long aftertaste, coffee ground, toasted wood, compound spices<br />
Comments: Quite spices, sweetie condense milk and toffee held, hints of sandalwood appeared overtimes. Solid body, not oily as expected but crispy instead, still dried ginger and spices, much toasty. Long toasty and woody aftertaste, chewing bitterness. This bottling is quite crispy and refreshing rather than those greasy and sweetie Taiwanese counterparts, and hence, details of tastes can be well identified, plus seasoning by species, making you glass after glass. Not a big dram, but instead it is balancing and layering, rich and detailing, love it.</p>

<p>台灣包桶的威士忌近年在香港賣得成行成市，口味方面很個人那就不說，包裝上則充滿中國元素，如三國呀戲劇呀等。正所謂藝術既嘢我識條鐵，默默的看過便好。</p>
<p>那有沒有想過，會有香港的選桶包桶呢？</p>
<p>近日有老友堅持要我去一間開業於觀塘的酒行(酒專)看看，基本上我已很厭倦公關式的吃喝活動及坊間的買賣，但老友堅持，那順意去看看吧，那便是標題的 <a title="The Rare Malt" href="https://www.facebook.com/theraremalt/" target="_blank">The Rare Malt</a> ，一間新開業的香港酒行(酒專)。這店的店長我應該認識亦可能之前有見過面，說實在的香港所謂的"酒界"活躍的來來去去總是那幾批人，就算我多宅也好，總也會識到些人的。年青的店長說有參加過我的講座和"自細"便有看 Sipping Malt 的文章 (自細? ^%$&amp;xo&amp;^;^%^%(^*&amp;&#8230;.)。店面裝潢平實中見心思，尤其喜歡那酒架設計，酒款由數百元的多納十五年到珍藏級的輕井澤和古董酒也有，正是豐儉由人，店長年青亦青靚白凈&#8230;.(哦~~~~ 你賣廣告!) OKOK，入正題。</p>

<p>這新開業的酒行竟然和台灣酒業名人黃敏恭先生合作推出香港限定的 The Rare Malt x 虎之選 x GlenDronach，還要是近年難求的二十四年老酒，真的意想不到! 雖然有不少香港人時興說甚麼"識人好過識字"，但以一間新開業的酒行，能否單憑人際關係就能打動虎哥黃敏恭先生出動"虎之選"的金漆招牌呢? 市道上很多人呢說則天下無敵，其實一出手便知有沒有! 喝喝看會一會吧！</p>

<p>樣本由老友提供，他從 <a title="The Rare Malt" href="https://www.facebook.com/theraremalt/" target="_blank">The Rare Malt</a>處取得。其後到訪該店時，有從原瓶倒了一杯再喝確認。一如以往，你敢提供樣本給我，我便敢照直寫。得罪你以後再無"樣本"送上? 那請便吧，反正市面上有大堆專家達人，不愁招不到人寫時興的"抄考"文章歌功頌德哦!</p>
<p>又是廢話，真正再入正題了，喝吧!</p>
<p>氣味: 乾薑，煉奶，拖肥，肉桂，丁香，檀木<br />
口味: 乾薑，黑咖啡，烤木頭，肉桂，丁香，藥草，啡糖<br />
餘醞: 悠長，咖啡渣，烤木頭，複合香料<br />
結論: 香料氣味明顯，煉奶和拖肥香甜的氣息持續，檀木的幽香慢慢沁出。酒體結實，沒有預想中的油感，但清脆，還是乾薑和香料的延續，更多烤炙和草本的味道。悠長的餘蕰，柔和的烤炙和木質苦味，好些香料作調味。對比起以往喝開的部份台灣多納包桶的濃厚甜美，這款兩地合作之選喝起來較清脆和明淨，內涵可細緻地表現出來，加上香辛料的調劑，喝起來不膩。這不是一款大嗚大放的酒，需要慢飲細嚼，才能欣賞到她的細緻，平衡和層次上的優良表現。不腻，耐喝，令人想再添杯，好酒。</p>
<p>&#8220;虎之選"招牌還真是靠得住。期待未來還會有更多優秀的香港或兩地合作選桶，讓我們享享酒福。</p>

<p>後記: 只有無料扮四條無自信的人才會將"識人好過識字"這句說話經常掛在咀邊，還要邊說邊表現出洋洋得意的樣子。我還是堅信"識字"最重要，做好自己本份，專注學習鑽研，造出成就，待那些依賴"識人好過識字"的閒人來巴結吧。做被人"識"的那主角，一定好過要死命去"識"人的那些茄呢啡。</p>
