<p>Hibiki 系列是 三德利 Suntory 旗下威士忌的王牌產品之一，標準酒款有經典的<a href="http://www.sippingmalt.com/2011/06/01/hibiki-17-years/" title="響十七" target="_blank">十七年陳</a>，高級的<a href="http://www.sippingmalt.com/2012/03/27/hibiki-21-years/" title="響廿一" target="_blank">廿一年</a>，旗艦級的三十年和調有梅酒桶的<a href="http://www.sippingmalt.com/2016/06/16/hibiki-12-1/" title="Hibiki 12 Years Japanese Whisky">十二年陳</a>，還有一些比標準酒款同等陳年但貴很多的的甚麼花鳥風月富士風雲等的特別版和免稅限定版，與及近期各大酒廠"不約而同"推出的無陳年標示 No Age Statement (NAS) 的 Hibiki  響 Harmony。新的 Hibiki  響 Harmony 算是大眾市場的入門酒款，價格比十二年陳平，但由於是無陳年標示而我亦未有喝過，是否相對於酒質來說真的"平"，我未能評論。</p>
<p>我現在要介紹的 Hibiki  Harmony，可不是現時的標準版，是 2013 年推出的兩款特別版的其中一款。</p>
<p>Hibiki  響 Mellow Harmony, 700 ml, 43%</p>
<p>這款 Hibiki  響 Mellow Harmony 是以<a title="響十七" href="http://www.sippingmalt.com/2011/06/01/hibiki-17-years/" target="_blank">響十七</a>的配方為基礎，調入三十年陳或以上的山崎 Yamazaki 原酒，穀物原酒則是來自知多 Chita 蒸餾廠，限量四千瓶。同期推出的另一款 Hibiki，是 Deep Harmony，同樣以響十七的配方為基礎，調入  ex-red wine cask 桶陳的 白洲 Hakushu，同樣是限量四千瓶。</p>
<p>說回這款要介紹的 Hibiki，名字叫 Mellow Harmony。Hibiki 已經是平衡柔和的了，還要 Harmony，再加上 Mellow，這款酒的風格看名字已經很明顯了。來喝喝看是否真的這麼芳醇和諧。於此多謝酒友賜酒。</p>
<p>氣味: 蜜餞梅子，鮮杏，蘋果，朱古力，檀木<br />
口味: 蜜糖，梅子，咖啡，柑橘皮，香料<br />
餘蘊: 中等長度，咖啡渣，燻木材<br />
結論: 很甜美柔和的香氣，甜中帶酸的蜜餞梅子尤其吸引，清香的鮮杏，香甜的紅蘋果，甘醇的朱古力，幽幽的木材香氣。酒體香軟，柔順，甘甜兼備。中等長度的餘蘊，甘香為主。很柔順易飲但不單調的一款酒，充份展現出調和威士忌的特性和優點，雖然整體偏香軟甘甜，仍有點點焦苦平衡，餘暇輕鬆時的佳品，正斗之作。</p>

<p>精釀啤酒所為何物，各人有各人不同的解讀。隨著認知的累積，我個人的看法與初接觸啤酒時已有不少改變，直至有幸遇上以下作品（對，我覺得它絕對配得上這稱呼），的確擴闊了我的眼界。了解他們的故事過後，驚訝地發現日本人所提倡的職人精神竟可和它無縫地銜接起來。</p>
<p>當大部份酒廠皆以無限創意來吸引更多的酒客目光的時候，這位煉金術士（The Alchemist）卻反其道而行，只專注於一件事－－他們引以為傲的Heady Topper。儘管剛好一年前曾短暫而少量地推出另一款名叫Focal Banger的美式IPA，但可見的將來直至有新的廠址與生產線，Heady Topper仍會是他們的唯一作品。（題外話，Focal Banger如此難得但仍有本地BeerGeek能弄到手，果真利害。Heady Topper如此”普遍”，當然難不到他）</p>
<p>故事的起始是創辦人John Kimmich與妻子在2003年於Waterbury開設酒吧，其間八年Heady Topper都是以On Tap形式在自家酒吧售賣。口碑固然是非常的好，但引發到現在我們有機會不用專程到酒吧也能享受此酒卻是源於一些不法的行為。事因有酒客在酒吧點了酒後自行瓶裝外帶再印上酒標然後在網上售賣。有見及此Kimmichs於2011年自家生產罐裝Heady Topper直至現在，或許我們應該要感謝當時不守規矩的酒客。但煉金術士仍不是一帆風順，在同年酒吧就受到颶風艾琳吹襲而不幸地嚴重損壞。</p>
<p>甚少從酒款命名到酒標設計都能如此精緻而精準的作品。層層遞進而直衝上頭的酒花禮帽，濃烈的上等貨色，看圖識字已能知道酒的內涵。由六種酒花混合而成的秘方，是很多自釀玩家也想破解的試題，在網上有大量的討論甚至有號稱複製品的釀造包出售。今次這酒在出廠一個月內品飲，狀態上佳，罐上建議原汁原味地直接飲用，但我等杯控當然對此半信半懷疑，因此五百毫升的酒液，一半罐內直飲，一半還是進杯品嘗。</p>
<p>8%酒精度的Double IPA，不追求強烈的苦而是浪接浪的酒花芳香。柑橘、松木、蜜糖，大量美式酒花香氣特徵，末段帶點鳳梨點綴。屬經典的氣息，我不會以酒花炸彈形容它，相對於北歐風格，Heady Topper實在算是內斂。罐內直飲苦度十分怡人、中等酒體、松木、拖肥、黑朱古力、柑橘、乾木頭，末段輕輕的甘甜。進杯後大致相同，多了少許的橙皮和香料感，追求平衡的話，幾近無可挑剔。餘蘊中等偏長，松木、木頭、火燒乾草，甘苦持續，好酒！</p>
<p>從酒中認識世界，或許我們應該思考生活的種種形式。是追求潮流時刻不斷地燃燒生命還是靜靜專注的慢活甚至是其他更多更多的可能。沒有誰對誰錯，只是健康的社會總不應只有一種答案。</p>

<p>雖然說威士忌近年於香港大熱，市面上多了很多酒款，對飲家來說是可喜的現像。很多的的商品有所謂的行貨和水貨，水貨當然不於此討論， 那便說說行貨。行貨威士忌，即是由酒廠酒商或正式代理引入的威士忌，有不少較資深的飲家抱怨行貨品牌不多，酒款太少，亦缺乏新酒款。其實近年有好些酒商開始引入一些新的品牌，亦會推出新酒款。猶記得 GlenDronach 及 BenRiach 的香港代理慎昌 Sims 為 Sipping Malt 的會員辦了一場叫好又叫座的試酒會(見"<a title="GlenDronach &amp; BenRiach 威士忌試酒會" href="http://www.sippingmalt.com/2014/11/19/glendronach-benriach-tasting/" target="_blank">GlenDronach &amp; BenRiach 威士忌試酒會</a>&#8220;一文)，欣喜終於開始有酒商關注香港市場。</p>
<p>去年，香港又多了一個品牌的威士忌進入香港市場，其代理 T&#8217;z 頗為進取，夥拍酒界人士和酒店餐飲業者舉辦多場品飲會，亦參與多個港澳的酒展活動，非常積極。我在酒展活動認識了其團隊，傾談間感受到他們的熱誠。如果香港有多一些進取熱誠的代理，雖則香港有高酒稅的障礙，但我相信仍然有一番作為的。我們的會員於 Sims 的試酒會中和 T&#8217;z 的團購活動買了不少完稅的行貨，要知道 Sipping Malt 的會員是既挑剔且數口精，他們買得下手的應該不會有錯的了。只要選擇多質素佳定價合理，行貨酒仍然是很有市場的。</p>

<p>說回 Tomatin 品飲會，其香港代理過去一年已經辦過多次，但我人窮事忙一直未有參與。昨晚假<a title="Tiffany New York Bar" href="https://www.facebook.com/Tiffanys-New-York-Bar-191809867607147/" target="_blank"> Tiffany New York Bar</a> 舉辦的一場品飲會，香港代理邀請出席，品牌大使也會在場，盛意拳拳，一定要出席的吧。</p>

<p>品飲環節由品牌大使導賞，這大使  Mr. Graham Nicolson 看上去有點粗獷味道，傾談下來覺得為人爽朗親切，一定比我親切。 Mr. Nicolson 本身是 Tomatin  的區域銷售經理，於 2009 年已加入酒廠。特別一提的是 Mr. Nicolson 是能操流利 Gaelic 蓋爾語，可視為他的母語。可惜時間所限，未有機會向他請教好些酒廠名稱的正確發音。</p>

<p>基本上這些酒款我在多個不同的品酒會上也喝過的了，那兩紳秘酒款分別是 vitage 1994  single cask 33827 及 vintage 1999 single cask 32896 for TSMC，有誠意。</p>

<p>就酒評方面，好聽點是我品飲認真堅持，說得白點其實是天資魯鈍，未能學似市面上那些專家達人每款酒一兩分鐘內喝兩口便可喝出萬千味道寫出洋洋百字的專業酒評，所以酒評這部份從略，待有機會時再寫吧。但整體而言酒質很好，兩款單桶不用說吧，入門版的 Legacy 貫徹平靚正的日常用酒精神，我們去年團購了近四十瓶，我們願意付錢買，還買了多麼多，不用懷疑了吧。我個人很喜歡帶有 port wood 風味的十四年陳，當然十八年陳的也很好喝，十二年陳四平八穩，帶點泥煤風味的 Cu Bocan 地獄犬也不錯。</p>
<p>大使先生帶了瓶 New Make 給大家嗅一嗅，我當然不滿足於聞香，問准大使先生後喝了一杯，雖然達 ABV 71%，但喝起來充滿南亞水果和糖水槳果的味道，還很順喉哦，可以直接裝瓶來賣吧。</p>

<p>我只是一介草民，對酒業無甚認識。我從字面理解，這款酒者原本是給酒商試飲的吧，簡單直接來說就是樣本吧。我喝的可是樣本中的樣本，是來自一眾酒友主辦，由代書兄導賞的"<a title="兩地威士忌品飲交流 – 徐代書 Keeper of the Quaich 與香港威士忌愛好者" href="http://www.sippingmalt.com/2015/06/29/hk-tw-whisky-tasting/" target="_blank">兩地威士忌品飲交流會</a>&#8220;。多謝各位酒友賜酒，令我有機會得嘗這珍貴的樣本。</p>
<p>氣味: 煙灰，紅蘋果，拖肥，胡椒，烤木頭，布冧<br />
口味: 微鹹，焦炭，咖啡，拖肥，多士，菸草<br />
餘韻: 中等長度，焦木頭，咖啡渣，藥草<br />
評語: 起首是煙灰，繼而清香的蘋果皮撥開煙霧，甜甜的拖肥潤飾，之後再煙燻木材，時間久了呈現出微酸的布冧。酒體結實，帶微鹹，煙燻加重，甜甜的拖肥之後有些煙草的味道。中等長度的餘韻，仍然的焦香，帶點咖啡渣和藥草的苦。煙燻調子中夾雜清新的果香及複合香料， 口味跟隨加點微鹹，由焦苦的餘韻延續。不是大鳴大放充滿深度的酒，但平衡具特特色，也是一款好酒。</p>

Date: 9 May 1997</p>
<p>I am just nothing more than a layman and have no knowledge in wines and spirits industry. I think that this whisky was released for purpose of its literal meaning. This sample was obtained from a tasting event guided by Mr. Kenny Hsu who is a Keeper of the Quaich. Thank you my friends for reserving me this precious sample.</p>
<p>Nose: ash, red apple, toffee, pepper, toasted wood, plum<br />
Palate: salty, charred coal, coffee, toffee, toast, tobacco<br />
Aftertaste: medium length, burnt wood, coffee grounds, herb<br />
Comment: ash in front, followed by fresh apple peel, sweet toffee, woody with smoke, little sour appeared over time. Solid body, firm, little bit salty, even toasty, sweet of toffee, charming tobacco. Medium length aftertaste, still toasted, comfortable bitterness of coffee grounds and herb. Smoky tone with freshness of fruit and mixed of spices, palate follows with slightly salty, lasting to aftertaste. Not a big complex whisky, but balancing and with characteristics, good dram.</p>

<p>Many distilleries have established their fan clubs. They may offer some privileges to their members, such as discount on purchase, preemptive purchase of membership exclusive bottlings, gifts on visits and even a parcel of land. Yes, a parcel of land &#8211; a square feet of land in Laphroaig distillery free to every Friend of Laphroaig. Obviously it is just a gimmick. Don&#8217;t think you could consolidate your &#8220;lands" and erect anything on it.</p>
<p>Most fan clubs are membership free for joining or accompanying by purchase of certain products. Springbank has its fan club, Springbank Society but £50 is payable for membership. In additions to common privileges of most fan clubs, a free polo shirt and whisky miniature will be given to the new members.</p>
<p>I  now introduce a Springbank whisky which is a membership exclusive bottlings, and of rather special one which was released for Springbank Society&#8217;s 10th anniversary.</p>

<p>Nose: Smoke, smoked fish, brine, toffee, nectar<br />
Palate: Brine, smoked eel, honey, ash, anise<br />
Aftertaste: Long, charred wood, herb, salty<br />
Comment: Rich, smoky, notes of ocean and seafood, candy sweet balanced the profile, fresh nectar appeared over time. Full body, smoked oily fish, very salty, little honey sweetened the brine, ended with spicy. Long aftertaste, still salty and more toasty. Rich and solid, very island style peat. I may guess it from Islay in blind tasting. A good young whisky, though not complex, layered and well structured, very good dram.</p>

<p>This Springbank whisky is a private bottling for a commemorating event  The Decommissioning of HMS Campbeltown on the 7 April 2011.</p>
<p>Don&#8217;t ask me what was this event or the story of HMS campbeltown as you guys know my ignorant. I just grabbed some information from the Internet about these things.</p>
<p>HMS Campbeltown was a frigate class warship of the British Royal Navy commissioned on 27 May 1989 and this warship was decommissioned on 7 April 2011. She made her final visit to her namesake town of Campbeltown in March 2011. A series of ceremonies had been taking place there for her decommission on 7 April 2011. The ship was then sold and demolished. Her ship&#8217;s bell was acquired from the first HMS Campbeltown which is famous in the action of St. Nazaire Raid in World War II and now her bell had been returned to Campbelltown for keeping.</p>

<p>Nose: medicine, seawater, dried flower, smoked mussel, brown sugar, cranberry sauce<br />
Palate: seawater, incense, dried flower, smoked fish, maple syrup<br />
Aftertaste: medium length, ash, clove<br />
Comment: Quite maritime and smoky on nose, little bit medicine while aroma of dried flower, balanced by fruity sweetness at end. Interesting woody spicy, incense alike but at palate, oh chewing an incense. Again ocean elements and ended with lovely maple syrup. Medium length toasty and spicy aftertaste. This Springbank whisky is full of maritime tastes, soft and mild, impressive by that spicy woody scent, lovely and interesting. An easy to drink with characters&#8217; good young Springbank.</p>

<p>繼續分享格蘭多納 GlenDronach 的酒評。這次介紹的，是一款來自台北美麗信花園酒店的選桶。</p>
<p>GlenDronach 20 years, 1993/2013, C# 36, 700 ml, 59.3%<br />
OB for Miramar Garden Taipei 台北美麗信花園酒店</p>
<p>我不是旅遊達人，甚至乎出國外遊的機會也甚少，當然對這家酒店是一無所知，在網路上看了看，據聞是一間頗受日本遊客青睞的酒店。同系還有一家新竹美麗信花園酒店。</p>
<p>這台北美麗信花園酒店包桶的 36 號桶多納聽聞市面能見度不高，價格亦較高，這也難怪的，這是人家酒店包桶的耶。我喝的很名顯是樣本，是我單方面認作的老友送的，多謝。</p>
<p>氣味: 舊冬蜜，麥炙中藥，黑棗，拖肥，黑朱古力，粗鹽<br />
口味: 舊冬蜜，蜜餞梅子，黑茶，柑橘皮，黑咖啡，藥草<br />
餘蘊: 悠長，烤木，炭燒咖啡，藥草<br />
結論: 起首有點酒精感，有點老舊氣息，甜中帶甘醇，未後有一點鹹味。酒體厚實溫潤，醇和雋永，偏向甘苦，餘蘊悠長，更為甘苦，但不刺喉。整體甚佳，複雜具層次，氣味濃香甜美不過膩，有草本及甘苦作平衡，尤愛溫潤的酒體，口味和餘蘊稍甘香焦苦，耐嚼。要挑剔的是藥草的苦味稍過了少許，但不過份，整體評價是正斗之作。</p>
<p>有病呻吟: 很多時人是很現實的，你對人家有利用價值的話，當然會稱兄道弟，面書見 post 速回見字即 like，不時要約聚會享樂，但你變得無大價值的時候，不要說人家還會視你為老友，連一聲招呼也沒有。會有真心無利益關係的朋有嗎?會有的，但絕少，遇上了，要珍惜。不過可惜的是，人總是不懂得珍惜，只知予取予攜，沒有感恩之心。人皆如是，我亦如是，唯常自省，冀免沉淪。</p>

<p>A simple tasting note about a GlenDronach. This GlenDronach is bottled for Mr. Kenny Hsu who is a Keeper of the Quaich. He is a friend of mine. He gave me a sample in a nice bottle in few years ago. I keep it as my treasure and therefore never open it. It has nothing to do with the value of this whisky but to the matter about how you value the friendship. Luckily my friends recently gave me another sample of this bottling. This sample is obtained from a Kenny guided tasting event organized by them. Thank you. Finally I could have opportunity to taste it while I can still keep Kenny&#8217;s bottle as my collection.</p>

<p>Nose: Dry ginger, preserved plum, raisin, citrus, chocolate, tobacco, cinnamon<br />
Palate: Old honey, preserved plum, toffee, coffee, preserved ginger, smoking box, spicy<br />
Aftertaste: Medium, burnt wood, coffee grounds, spicy<br />
Comment: Lightly sour citrus and preserved plum at front, fine chocolate followed, dried ginger added little bit spicy, hints of tobacco, ended with cinnamon. Sticky old honey and sweet toffee, mildly hot preserved ginger and mixed spices, touch of smoke and oak. Medium length bitter and toasted aftertaste. Rather sour fresh stone fruit and preserved berries notes but sweet honey and sweeties at palate, balance by spices and wood avoiding overwhelming, a bit harsh bitterness in aftertaste but still acceptable. Full and rich, complex and layered, a good big whisky.</p>

<p>麥卡倫一向以其雪莉桶陳的威士忌以自豪。當其<a title="麥卡倫之變節" href="http://www.sippingmalt.com/2010/05/03/macallan-18-fine-oak/" target="_blank">雅致系列 Fine Oak series</a> 於 2004 年首現，好些麥卡倫的死忠粉絲大表不滿 &#8211; 不再是根正苗紅的雪莉麥卡倫了! 此外，還有傳言說標準的雪莉桶陳系列將會被這新的雅致系列取代。又據聞亞洲市場的反應最大，麥卡倫實在不感得失這個大市場，隨即更改配方，呀，照政府的邏輯這應該叫作"優化"，加重了雪莉桶陳原酒的成份，"優化"為<a title="黃金三桶" href="http://www.sippingmalt.com/2010/05/10/macallan-18-fine-oak-triple-cask/" target="_blank">黃金三桶系列 Fine Oak Triple Cask Matured series</a>，並澄清原有的雪莉桶陳系列繼續發行。這幕肥皂劇終於可以完場。</p>
<p>盡管如此，很多飲家還是偏愛標準的雪莉桶陳系列，尤其是雪莉桶陳系列和黃金三桶系列的官方定價是相同的，這是真的是先入為主的原因嗎?</p>
<p>我有喝過數個版本的十八年 Fine Oak，甚至乎二十五年陳的也喝過，我個人認為實在好喝。那現在喝喝入門款的十二年陳如何?</p>
<p>Macallan 12 years Fine Oak Triple Cask Matured, 700 ml, 40% (Sample 50 ml)</p>
<p>氣味: 出爐麥飽，葡萄乾，黑棗，蜜炙中藥，拖肥<br />
口味: 拖肥，麥飽，葡萄乾，黑朱古力，木質<br />
餘蘊: 稍短，多士，焦糖<br />
評語: 很喜愛那出爐麵包的香氣，這算是我對麥卡倫的記認，甜甜的葡萄乾和拖肥，有些許黑棗和蜜炙中藥增添特色。酒體柔軟，比氣味甜，仍然有那出爐麵包元素，多了些焦香味道。較短的餘韻，輕軟。這一瓶十二年陳的 Fine Oak 麥卡倫，氣味十分討好，結構和平衡於烘焙穀物，糖果，乾果和草本支間算不錯。酒體較輕軟但仍然好喝，豐富可人，餘韻亦如是。爽凈好喝的麥卡倫，飲得過。</p>
