<p>我在去年 Hong Kong International Wine &amp; Spirits Fair 於 Tz 的展場上受他們的邀請，即場試了多個來自單桶原酒的樣本，我選了兩款個人喜愛的，給他們參考。當日 <a title="Ginger" href="https://www.facebook.com/barginger.hk/" target="_blank">Ginger</a> 的 Tony 亦有同場試飲，湊巧大家的選擇都是一致。一直到近日，他們傳來訊息，說根據 Tony 和我當日的意見，選了其中一桶原酒，作為香港專屬酒款。噢&#8230;.竟然!?</p>

<p>Tz 透露，這款香港專屬單桶 Tomatin 的酒標概念主題是"獅子山下"，以獅子山作為主題背景，由香港知名插畫家 <a title="Zoie Lam" href="https://www.facebook.com/Zlism/" target="_blank">Zoie Lam</a> 執筆，在她的 Zlism 星人"條條"跟他的朋友們一同遊走獅子山，酒標上顯現出獅子山的型態和香港大廈的面貌。我想，作為一個"真.香港人"，對獅子山下會有另一番的感情。所謂的新香港人是不會明白的，而忘本的香港叛徒的鼠目寸光亦只看到眼前的假像但卻看不見獅子山的遠大。</p>

<p>除了這款酒緣起的 Hong Kong International Wine &amp; Spirits Fair, Tz 亦有於香港專屬年度盛事 <a title="Wine and Dine Festival" href="http://www.discoverhongkong.com/tc/see-do/events-festivals/highlight-events/wine-dine-festival.jsp" target="_blank">Wine and Dine Festival</a> 參展。適逢今年為 Wine &amp; Dine Festival 十週年，Tz 以這款香港專屬單桶 Tomatin 配合，於 Wine and Dine Festival 宣揚香港獅子山精神!</p>

<p>款酒是 Tomatin 酒廠正式裝瓶，並不是那些獨立裝瓶廠的包桶。很不錯的規格，年青的記年雪莉單桶原酒。老實說，雖則當天我是冒著爆 quota 的危險，盡量專心的去品飲，但我始終只是凡人，沒有那些甚麼達人或專業品飲家的神奇本事，在會場上百款酒每款酒匆匆只嘗一兩口便可寫出<del datetime="2018-08-23T01:34:32+00:00">罐頭</del>專業品酒文下結論。當然，中年癡呆的我現在亦不會記得當天品嘗的細節。要寫好酒評，當然是要喝已正式裝瓶的酒吧。</p>
<p>很明顯 Tz 會送給酒我，但了解我的朋友都只道我不太愛吃魚，尤其是淡水魚，例於鱔魚等。所以呢，我跟他們說我朋友很有興趣要買一瓶，這一定要收錢的吧。面書上"人帥真好"這些閃光帖與我可不太有緣，我還是老老實實用真金白銀買一瓶來好好品賞，認真撰寫酒評吧!</p>
<p>唔&#8230;.這瓶酒是我這窮酒鬼用血汗錢買的，不好喝的話可不要怪我筆下無情哦!</p>
<p>氣味: 牛奶朱古力, 玫瑰花水, 檀木，焦糖，拖肥，蜜餞梅子，混有丁香的香料<br />
口味: 黑朱古力，咖啡，檀木，皮革，煙草，岩鹽，乾果皮， 丁香<br />
餘蘊: 中等長度，咖啡渣，烤木頭，香料<br />
評語: 氣味濃郁，起首是牛奶朱古力的甜美氣味，帶些許玫瑰花水氣息，深沉的檀木香氣，甜蜜的焦糖拖肥。雖則酒精度達 ABV 60.7%, 但沒有刺鼻感，非常喜歡那牛奶朱古力和檀木的香氣。酒體強壯有力，帶點火，口味上沒有氣味上的甜，轉為皮革煙草的男人味，帶些丁香的辛辣和微咸。中等長度的餘蘊，甘苦適度，舒適。整體上結實豐厚但不過重，口味上有些菱角，就複雜度和層次感，以這年青的酒來說，絕對是交足功課有餘。</p>
<p>酒質確實不錯，又可以行善積德，大家"真.香港人"為獅子山下香港精神打打氣吧!</p>

<p>香港本地酒專 <a title="The Rare Malt" href="https://www.theraremalt.com/" target="_blank">The Rare Malt</a> 的中環店於今天開張。甚麼祝賀大展鴻圖等的門面話不用說了，用心專業酒好價靚當然會生意興隆，奉承R著數也好(如我之流)，又或葡萄眼紅中傷也好，也改變不了不日專家 Dickson 敲鑼的事實的，對吧?</p>
<p>說得太遠了，還是說回主題吧。The Rare Malt 早前有一款和台灣酒業名人黃敏恭先生合作推出香港限定的 <a title="The Rare Malt x 虎之選 x GlenDronach" href="http://www.sippingmalt.com/2017/03/07/glendronach-24-years-1992-c95/" target="_blank">The Rare Malt x 虎之選 x GlenDronach</a>，口碑甚佳。為配合<a title="The Rare Malt Central Shop" href="https://www.facebook.com/theraremaltct/" target="_blank">The Rare Malt 中環店</a>的開幕，他們推出了一款 The Rare Malt 選桶的威士忌，同日首發。這款酒由選桶到酒標設計都是他們團隊一手一腳，每個細節都精挑細選，親力親為的精心傑作。好了，花錦鱔也吃過了，說回這款酒了。</p>

<p>Glentauchers 是 Speyside 的酒廠，早於 1898 年開始投產，其命運一如大多數的酒廠，其間被人買買賣賣，在 1985 年於 United Distillers (即現今 Diageo 的部份前身) 的手上被休停。 Allied Distillers 於 1989 買下 Glentauchers，翌年復產，之後一直在 Pernod Ricard 麾下至今。 Glentauchers 的原酒聽聞絕大部份用於調和威士忌 Blended Whisky 之用， 早期原廠有發行過十二年陳和二零零零年取代為十五年陳，其餘間見於市場的單一麥加威士忌瓶裝都是<a title="獨立萬歲" href="http://www.sippingmalt.com/2011/03/09/independent-bottler/" target="_blank">獨立裝瓶廠(Independent Bottler, IB)</a> 的出品。說起其相關的調和威士忌，已知主要的有 Ballantine&#8217;s 和 Teacher&#8217;s。前者於兩三年前先於免稅店發行了一套三款的 Ballantine&#8217;s Single Malt Whisky，提供其不同特色風味的其中三種核心原酒，全部都是十五年陳 40% ABV，分別是 floral with a hints of spice 的 Miltonduff，fruity with honeyed sweetness 的 <a title="破舊立新" href="http://www.sippingmalt.com/2012/07/26/glenburgie-1983-c9800-bbr/" target="_blank">Glenburgie</a> 和 citrus with soft berries 的 Glentauchers。</p>
<p>老毛病又發作，又說遠了，這次真的只說回主題的了。這款 The Rare Malt 的 Glentauchers 選桶瓶裝的原酒是 1996 年蒸餾，波本桶陳，今年裝瓶，足二十一年陳。聽聞在地星上舉足輕重的威士忌酒界中，雪莉派門徒對波本門近期的"眾人皆醉佢最醒十瀆一清流"的攻勢正處於掙扎中。其實，我既不是達人或甚麼專業品飲家，這些浩瀚的宇宙級威士忌酒界風潮，與我無關，這只是我自己的維園呀叔瘋言瘋語罷了。我一向不理會甚麼潮流理論，酒的所有詳情資料是必須要知道的，這樣才能了解學習到從酒的養成和風味的關係，但只要是要品賞的酒，我便只以個人感觀去品味酒的本質，不會有特別喜好的桶型，不會有最喜愛的酒廠，亦不會有鍾愛的口味，就是如此簡單直接的去品飲。</p>
<p>雖然聽說這款酒的包裝和酒標是很精美，但我其實未有見過成品的，當時拿了樣本中的樣本，為示虔誠，直到昨天才擇到吉時開喝。(你吹夠了吧&#8230;.)</p>
<p>氣味: 忌廉(奶油)，柑橘皮，雲尼拿(香草)，燒綿花糖，牛油(黃油)，爆谷，配烤火雞的小紅梅醬，隱隱的香料<br />
口味: 橙皮果醬，乾木頭，咖啡渣，清蛋糕，椰子脆片，包含丁香等的辛香料<br />
餘蘊: 悠長木質微苦，雲尼拿<br />
評價: 一聞酒香，就如令人有置身於戲院之感，熟悉的牛油爆谷洒上檸檬皮抹的雲尼拿雪糕，還有烤綿花糖，小紅梅醬令人期待隨後的烤火雞聖誕大餐，充滿愉悅的香氣，末後有些辛香料，平衡過甜的感覺。酒體結實，沒有氣味上的豐富和香甜，較重木質和香料，亦有些甜點潤飾。悠長的餘蘊，輕軟的木質苦味，帶些雲尼拿味道調劑。這是一款上佳的陳年波本桶陳的威士忌，波本桶陳賦予的香氣味道，豐富而不過於濃重; 陳年培養出溫婉融和的酒質，值得去慢慢細味。這不是一款大鳴大放，予人味覺冲擊的主流口味的威士忌。老友間飯後小聚，無論是麻甩佬間的家事國事天下事，又或是淑女間的輕聲軟語細說閨房妙事，這款酒都是上佳的催化劑 (當然，淑女也會聊世界大事，男人老狗也可分享閨房樂，無性別定型又或歧視的，OK?)。</p>

<p>那還得了的? 麥記年份酒在市場上罕見，有的話價錢亦不會便宜，還要是單桶原酒首充雪莉桶陳顏色夠深哦! 真的管它好不好喝也買下來<del datetime="2018-05-02T09:17:51+00:00">炒賣</del>投資吧。 聽聞麥記也要看著庫存，對稍高年份的酒開始惜賣，更何況是單桶原酒呢，裝瓶賣的話會賣好價錢吧。 說回這款酒，雖則不是原廠裝瓶，是獨立裝瓶廠向原廠買入整桶酒&#8230;.. 獨立裝瓶廠向原廠買入整桶酒?麥記? 麥記年份單桶? 唔，我好像明白了些甚麼&#8230;.</p>

評價:很明顯的焦炭氣味，微酸的烏梅帶來清新感，優質朱古力，點點的多重香料。酒體厚實，口味主要延續氣味，多了些皮革和煮過的蜜糖，末後帶點微鹹。餘蘊悠長，帶焦炭和藥草焦苦。氣味可以，酒質入口，結實濃郁，入口味道算豐富，和餘蘊一樣的偏重焦木味道。雖則有些梅子和蜜甜點綴，對我個人口味來說，整體上那焦木元素是過重，平衡和層次感不足，小酌一兩小杯倒還有趣的。這款酒不用理會我這等業餘淡友酒評，單看深沉的顏色和雪莉桶陳原酒，再計入那必殺傳言，應該會受市場歡迎。</p>

<p>麥卡倫 Macallan 的威士忌真的很有話題性，有人會對她指指點點，不是說她巧立名目不斷推出新酒款賣高價，就是批評她酒質不比從前說只有喝過舊的才算喝過麥卡倫，云云。世事真奇妙，正是你有你鄙視，我有我熱賣，就如麥當奴一樣，總有一大批捧場客。正所謂大家都是"麥記"，不用分得那麼細。</p>
<p>早前在<a title="The Rare Malt" href="https://www.theraremalt.com/" target="_blank">相熟酒行</a>，靚仔店主倒了一杯威士忌給我，我隨意的喝了兩口，很不錯哦! 味道豐富結實四正。查問之下才知道是 Macallan Classic Cut，看那名字，初初還以為是甚麼 Amber Sienna 之類的系列酒款。我可不是甚麼達人又或那些專業品飲家，沒有本事不管環境個人狀態有異能短時間內喝多款酒也可"寫出"專業酒評，所以我只好厚面皮<del datetime="2018-01-03T07:12:32+00:00">買</del>拿些樣本回去，齋戒沐浴更衣後才專心品飲吧。窮人事忙亦善忘，直到近日才找到機會品飲及完成酒評。</p>
<p>Macallan Classic Cut Limited 2017 Edition, 750 ml, 58.4%</p>
<p>開宗明義 Limited 2017 Edition，雖則說又是限量，但據聞有九萬瓶，不知是限甚麼量。另外這是 2017 版，很明顯如果這一版買得好，就自然會有 2018 版，2019 版&#8230;.直到永遠。 根據背標介紹 &#8220;Exclusively matured in hand picked sherry seasoned oak casks from Jerez, Spain" Oh my goodness! 全程雪莉桶哦! 顏色深又是疑似桶裝濃度，一定大受"雪莉派"門徒歡迎，更受<del>炒家</del>投資者熱捧吧!。麥記還算老實，雖則說是雪莉桶陳，但也明言是 &#8220;Sherry seasoned oak casks"。當然了，不然，你以為一直以來會有那麼多動輒 Solera since 18XX 的雪莉桶提供給眾多威士忌酒廠嗎?</p>
<p>也順帶一提，我喝的這款酒是 750 ml 容量的瓶裝，主要市場應該是美國和北美一帶吧。</p>
<p>言歸正傳，好，喝酒去!</p>
<p>氣味: 舊冬蜜，蜜餞梅子，焦糖，拖肥，肉桂，提子，多士，丁點的西藥粉<br />
口味: 舊冬蜜，烤炙藥草，咖啡，麥包，肉桂，帶些月桂葉的混合香料<br />
餘韻: 悠長，烤木頭，咖啡渣，藥草<br />
評價: 氣味豐富，一堆甜東西，焦糖餡的拖肥糖沾些陳年冬蜜，幸好有些香料和焦香氣味平衡，烘焙麵包的香氣提醒你她的穀物出身，有點點的藥粉氣息，不反感。酒體結實，稍膩的冬蜜，烤炙過的藥草和咖啡焦苦，末後一些香料調味。餘韻悠長，更是焦香和帶木質草本的微苦。很好喝的麥記，豐富厚實，是多了些稜角，但整體上表現很不錯，好酒。</p>
<p>後記: 早已說過我近年已很少留意酒界的人和事，我直到近日才知道，無分西洋還是華文圈，有好些威士忌達人和專業品飲家等將這 Macallan Classic Cut 和"千金難買早知道"的 <a title="簡單直接的麥卡倫" href="http://www.sippingmalt.com/2012/08/13/macallan-10-years-cask-strength/" target="_blank">Macallan Cask Strength</a> 相比較，甚至直接推論這 Classic Cut 是麥卡倫用來取代 Cask Strength，用以延續其<del datetime="2018-01-04T07:57:09+00:00">炒賣</del>投資神話。洋洋千字，字字珠璣，正反立論&#8230;.看過後令人有重回少年歲月的感覺哦! Yeah! 各位學生時代有參加過校際辯論比賽的吧! XDDD</p>

<p>Glenallachie 的威士忌，在市場上並不多見，一般見於<a title="獨立萬歲" href="http://www.sippingmalt.com/2011/03/09/independent-bottler/" target="_blank">獨立裝瓶廠 Independent Bottler (IB)</a> 的出品，原裝裝瓶的更罕見，Chivas Borthers&#8217; 的 Cask Strength Edition 系列是少數之一。Glenallachie 的存在，是提供原酒調配調合威士忌，她是 Chivas 旗下多個威士忌品牌的原酒之一，除了主力 Chivas Regal，亦包括 Highland Clan, House of Lords, Passport, Queen Anne Clan Campbell 和 100 Pipers。後這數款威士忌罕見於香港酒行，反而偶見於一些辦館或非集團式小型超市。</p>
<p>來個 Glenallachie 的簡介吧，這算是間年青的酒廠，於 1967 年才由 Mackinlay McPherson Ltd. 建立，於 1985 年賣了給Invergordon Distillers Group，但轉手後短短兩年便被停廠，再兩年後便又再被賣走，真薄倖哦。買家是隸屬於 Pernod Ricard 的 Campbell Distillers。 Glenallachie 成為了 Pernod Ricard 旗下一員，終於有運行了。Glenallachie 被納入了 Chivas 名下的大軍之中，於前所述，成為了旗下多個威士忌品牌的原酒之一。此外，Glenallachie 原有的兩台蒸餾器亦加倍至四台，其命途亦穩定下來，一直至今。</p>
<p>以下要介紹的這款 Glenallachie，是由 The Whisky Agency TWA 裝瓶的老傢伙。說起 TWA，是由 Carsten Ehrlich 於2008年成立，初期主要是替裝瓶廠，俱樂部及公司等裝瓶，做幕後角色，後來加重 TWA 自我裝瓶品牌的比重，選酒風評甚佳，廣受歡迎。其實 TWA 還有多個品牌，包括 The Perfect Dram, Liquid Sun, Liquid Library 及 Private Stocks 等。</p>
<p>TWA 的酒標一向非常有特色，題材廣泛，跟一向強調歷史傳統的蘇格蘭古典風格大異其趣。近年 TWA 的瓶裝在台灣頗為活躍，亦多了不少本地公司社團包桶。原來早於2011年，已經有台灣威士忌社團引進 TWA 裝瓶，在 2012 年，TWA 和台灣人上人ART展開正式合作，引進 TWA 全系列酒款進入大中華區，方便了台灣本地公司社團的 TWA 選桶。</p>
<p>又扯遠了，還是說說這款 TWA 裝瓶的 Glenallachie 了。</p>

<p>氣味: 蜜糖，紙皮，香草，忌廉，乾草，柑橘，鹽焗果仁<br />
口味: 蜜糖，橙皮果醬，黑咖啡，甘草，多士，烤木頭<br />
餘蘊: 中等長度，黑茶，乾果皮，焦糖<br />
結論: 起首有些酒精感及紙皮的沉悶感，不久消散，清甜，和潤，未後有點鹽焗果仁的香氣，加添厚度。中等酒體，很甜潤的蜜糖，甘甜的果醬，有焦香的咖啡和多士，未後甘草的甘涼。中等長度的餘蘊，融和的草本味道。氣味及口味上不像有三十八年的老舊，但細膩，融和，要細賞，三十八年的歲月，並不在於豐富多彩的閱歷，但練就世故老練，人生不一定要璀璨多彩，平實中也會有細味之處。</p>

<p>The Bowmore which I now introduce is rather uncommon in OB past series, namely, vintage, cask strength and wine wine cask aged. According to the information from Internet, this 1992 distilled whisky was firstly aged in Bourbon cask for six years and removed to limousin cask which previously held Bordeaux wine for further 10 years. Ten years&#8217; secondary ageing cannot be said a &#8220;finish" and therefore it was termed &#8220;Wine Cask Matured".</p>
<p>Let&#8217;s tasting this wine cask matured vintage Bowmore.</p>
<p>Bowmore 16 year, 1992, Wine Cask Matured, 700 ml, 53.5%</p>
<p>Nose: Pepper, fortified wines, licorice gum, sea salt, caramel, toffee<br />
Palate: Pepper, licorice, caramel, smoked fish, charcoal, dark chocolate<br />
Aftertaste:Medium length, charcoal, roast fish, spices<br />
Comment: Pepper alike spices in the first wave on nose, followed by sweet fortified wine and licorice gum, then island character sea salt appeared, salty favored caramel stuffed toffee bar followed. Full body, taste followed by aromas, medium length aftertaste, trended to toasty. Not very ocean at the beginning, wine favor as the name suggested. Aftertaste it is an islander, sea flavor cannot be concealed. Very good balancing, rich, layered, an excellent whisky.</p>

<p>Just a simple tasting note about a young Bowmore bottled by The Whisky Agency (TWA)</p>
<p>Bowmore 11 years, 2001/2012, TWA, 700 ml, 53.6%</p>
<p>Nose: Sea breeze, ash, smoked fish, toffee, clove<br />
Palate: Sea water, clove, toffee, barbecue fish, coffee grounds<br />
Aftertaste: Medium length, char coal, tea waste<br />
Comment: Very ocean note, somehow at BBQ stall by the coast. Firm body, oily, inhere elements from nose, not complex but clear and straight forward. Toasty taste also plays an important role, especially at later stage. A good whisky indeed.</p>

<p>繼續是 Bowmore 的簡單酒評。我現在要介紹的這款酒，是當時 Bowmore OB 中較少見的記年 vintage 還要是疑似桶裝濃度 cask strength 的酒款，特別的還有是用紅酒桶陳年的。就網上一些未經證實資料所得，這款一九九二年蒸餾的酒，先陳年於美帝波本桶 Bourbon cask 六年，再轉到波爾多紅酒桶 Bordeaux wine limousin cask 陳年十載，十年的話不止過桶了吧，所以酒標是印上 Wine Cask Matured。</p>
<p>來，喝渴看這紅酒桶陳的 Bowmore 是怎樣的吧。忘了說，這樣本是近兩年喝的了，這算是舊酒評。樣本來自酒友 Ginger 的老 Tung。</p>

結論: 充鼻而來的是類似胡椒的辛香料，一輪帶甜的強化酒和甘草軟糖過後，代表性的海鹽才猶抱琵琶半遮面的出現，之後鹹香持續，香甜的焦糖拖肥接續。酒體豐厚，口味繼承氣味，中等長度的餘蘊，焦香為主。氣味起初不是很海島，很葡萄酒桶陳的風味，當然，島民始終是島民，大海氣息是掩蓋不住的。甚佳的平衡，豐富，層次佳，正斗之作。</p>

<p>一個間單的小酒評，由 The Whisky Agency (TWA) 裝瓶的 Bowmore 年輕酒款。</p>
<p>Bowmore 11 years, 2001/2012, TWA, 700 ml, 53.6%</p>
<p>氣味: 海風，煙灰，燻魚，拖肥，丁香<br />
口味: 海水，丁香，拖肥，烤魚，咖啡渣<br />
餘蘊: 中等長度，焦炭，茶葉渣<br />
結論: 很海洋的氣味，有點像在海邊的燒烤小食攤檔。酒體結實，油潤，延續氣味，整體不複雜，但清晰直接，除海島元素外，亦重焦香味道，尤以後期發展更重，清脆易飲，飲得過。</p>
<p>很簡單，對吧。沒有甚麼大故事，直接到位就行。對自己要有信心，不用左抄一段右抄一遍，以無關痛癢的文字去填滿空間，去顯得好像很豐富懂很多似的。真的沒有信心?不打緊，世上甚麼事也需要學習的，就算 XXOO 也要觀摩多點愛情動作片學一招半式吧。自己認真好好打穩根基，學到的永遠是屬於自己的。時興說甚麼"識人好過識字"，為參麼不自己好好學字識字，待那些喜歡"識人好過識字"的人來巴結你呢?</p>

<p>我現在要介紹的這款春岸 Springbank 威士忌，是甚為特別的。</p>

<p>我只是一介草民，對酒業無甚認識。我從字面理解，這款酒者原本是給酒商試飲的吧，簡單直接來說就是樣本吧。我喝的可是樣本中的樣本，是來自一眾酒友主辦，由代書兄導賞的"<a title="兩地威士忌品飲交流 – 徐代書 Keeper of the Quaich 與香港威士忌愛好者" href="http://www.sippingmalt.com/2015/06/29/hk-tw-whisky-tasting/" target="_blank">兩地威士忌品飲交流會</a>&#8220;。多謝各位酒友賜酒，令我有機會得嘗這珍貴的樣本。</p>
<p>氣味: 煙灰，紅蘋果，拖肥，胡椒，烤木頭，布冧<br />
口味: 微鹹，焦炭，咖啡，拖肥，多士，菸草<br />
餘韻: 中等長度，焦木頭，咖啡渣，藥草<br />
評語: 起首是煙灰，繼而清香的蘋果皮撥開煙霧，甜甜的拖肥潤飾，之後再煙燻木材，時間久了呈現出微酸的布冧。酒體結實，帶微鹹，煙燻加重，甜甜的拖肥之後有些煙草的味道。中等長度的餘韻，仍然的焦香，帶點咖啡渣和藥草的苦。煙燻調子中夾雜清新的果香及複合香料， 口味跟隨加點微鹹，由焦苦的餘韻延續。不是大鳴大放充滿深度的酒，但平衡具特特色，也是一款好酒。</p>
