<p>前文簡單介紹了 Ledaig，亦分享了其原廠入門版酒款的酒評，現在介紹一款獨立裝瓶廠的出品。</p>
<p>Ledaig Peated 15 years, 1998, C# 800031, Blackadder, 700 ml, 63.9%<br />
Distilled: 3 April 1998<br />
Bottle number: 33/538</p>
<p>這是一款由獨立裝瓶廠 Blackadder 裝瓶的威士忌，Blackadder 於 1995 年由 Robin Tucek 及 John Lamond 創立。Blackadder 的名字，是取自一位蘇格蘭歷史人物 Bishop John Blackadder (1622 &#8211; 1685)，我這老粗當然不會懂得這位人物，有興趣的讀者可以谷歌一番。其實我想重點說一說 Blackadder 的一個特色，就是他們開宗明義要求原汁原味的威士忌，不兌水不調色，裝瓶前只作粗過濾，所以很多時其瓶裝威士忌內會有微小沉澱物。原汁原味的威士忌喝的不一定是完美的味道，喝的是倒是老酒鬼對威士忌原酒的堅持和風味。</p>
<p>氣味: 煙蠔，煙灰，BBQ用的蜜糖，煙醺魚，八角，甘草糖<br />
口味: 煙灰，柑橘，煙蠔，煙醺帶油份的魚，穀物<br />
餘醞: 悠長，木炭，香料<br />
評價: 氣味上烟灰和海洋氣息明顯，柔和平衡，甜蜜香氣和香料作支援。酒體柔和，調子和氣味相近，稍為平面，悠長帶焦炭和香料的餘蘊。原汁原味的黑蛇加上高達 63.9% 的酒精度，想像會是很強橫的酒，但喝起來又不是那回事，沒有預想中的爆炸性，結實之餘亦柔順。氣味上沒有太多的酒精刺激，表現很好，聞起來豐富舒適，口味和餘蘊上亦可以，不算精彩，但具話題有特色，值得一喝的。</p>

<p>Ledaig 是位於 Isle of Mull 的 <a title="茂利島" href="http://www.sippingmalt.com/2011/10/06/tobermory-10-years/" target="_blank">Tobermory</a> 蒸餾廠的出品。無泥煤的酒款就以 Tobermory 名義發售，泥煤風味的就用 Ledaig 這名字。在市場上，Tobermory 這名字好像較多人認識，其實 Tobermory 於開廠時的名字正正就是 Ledaig。</p>
<p>在介紹 Tobermory 的<a title="茂利島" href="http://www.sippingmalt.com/2011/10/06/tobermory-10-years/" target="_blank">前文</a>中有一筆資料要更新，本身隸屬於 CL Financial，營運 Tobermory 及 Ledaig 的 Burn Stewart Distillers，於 2013 年被南非酒業巨人 Distell Group 收購了。Burn Stewart Distillers 同門蒸餾廠有 Bunnahabain 和 Deanston，與及 <a title="黑瓶" href="http://www.sippingmalt.com/2012/07/09/blackbottle/" target="_blank">Black Bottle</a> 和 Scottish Leader 等一些調合威士忌品牌。</p>
<p>現在就介紹一款 Ledaig 的威士忌，原廠裝瓶的十年陳酒款。雖則是入門酒款，但原廠裝瓶的入門酒款卻往往能表現出酒廠基本風格，值得一嘗的。要一提的是這是舊版本的酒款。</p>
<p>Ledaig 10 years, 700 ml, 43%</p>
<p>氣味: 瓜皮，海草，煙燻，燻魚<br />
口味: 白糖，香草，海水，煙燻，煙蠔，丁香<br />
餘蘊: 中等長度，焦炭，海鹽<br />
結論: 氣味上是乾淨的泥煤氣息，清爽，有點點海洋風味。中等酒體，油感，頗鹹，同樣有海產味道，末後帶些辛香料。中等長度的餘蘊，微鹹，甘苦適度，舒適。很簡單但很清爽，意想不到的頗鹹，還有豐富的鹹鮮風味，清脆直接，對重症病患人士來說算是頭盤的沙律，開胃之選，飲得過。</p>

<p>大力斯可 Talisker 這位於 Skye 海島上唯一的酒廠，貴為酒業龍頭之一 Diageo 的其中一間核心酒廠，縱然有酒廠林立如戰國的艾娜島 Islay 在前，有 Talisker 座陣的 Isle of Skye 其風頭沒有被蓋過，Talisker 在威士忌愛好者的心中一向佔有一重要地位。當然，我所指的威士忌愛好者，是對威士忌的愛好植根於任督二脈，只專著於品賞酒的本質的死忠份子老酒鬼。至於那些"新進"或"新晉"達人又或是甚麼專業品飲家，或那些面書上個人部落格上開口埋口要強調自己日飲夜飲無威不歡，又或定調自己是某門某派如泥煤門壇主或雪莉派掌門，等等，我就不知道了，算我孤芳自賞不懂世情吧。</p>
<p>還是說回 Talisker 的威士忌吧，這酒廠的出品我喝過的不多，喝的也是標準酒款。很高興有老友請我喝其三十年陳的 Talisker, 雖說酒老不一定好喝但通常貴，但對我這等膚淺的窮酒鬼而言，有機會喝上這等老酒貴酒，總也是高興的吧。新一年了，祝各位也遇上貴人好事，高高興興吧！</p>
<p>Talisker 30 years, B# 10/3912, Bottled 2015, 700 ml, 45.8%</p>
<p>氣味： 烤蠔，蜜糖，朱古力，焦炭，皮革，黑胡椒，海水<br />
口味： 黑朱古力，烤木頭，煙草，海水，焦糖<br />
餘蘊： 中等長度，鹽花，焦炭，蟓殼<br />
評語: 氣味起首有些封閉，要待些時間打開。那氣味呢，今我聯想起待在碼頭檔口，用炭火烤蠔，抹上點蜜糖和灑些黑胡椒上菜，吃罷還有朱古力做甜品。中等酒體，很柔和，多了些焦香和木質。中等長度的餘蘊，微咸, 海旁的感覺。這款大力斯可呢，我用文青調子說說: 一個海之子，就是硬要被套上西裝革履坐在寫字樓；海之子，還是粗獷的站在船上和大海搏鬥才最迷人吧。甚麼說也好，這是一款不可多得的好酒。</p>

<p>我現在要介紹的一款 Dun Bheagan Regional Malts，是來自 Island 的。</p>
<p>Dun Bheagan Island 8 years, 700 ml, 43%</p>
<p>當然酒商沒有說明是來自那間蒸餾廠，但這次應該會較易猜中，不會是 Islay，按標準酒款設定計，喝過後如有海島特色的大致不會是 Arran，Jura 和  Tobermory of Mull，那候選佳麗只餘 Talisker，Ledaig of Mull 和 Highland Park 罷了。</p>
<p>來，喝一喝猜一猜吧。</p>
<p>氣味: 海風，海草，乾草，香草，燒烤用蜜糖<br />
口味: 海鹽，燻魚，香草，焦糖<br />
餘蘊: 稍短，海鹽，煙蠔，焦炭<br />
結論: 充滿海洋的氣味，還有像在海邊燒烤的感覺。酒身較輕，簡單，但仍有海產的味道。餘蘊略短，同樣有點煙燻海產的餘味。整體稍緊單，但氣味上不錯，餘蘊稍短但算不錯，以八年的酒來說是飲得過的。哦，有海島風味，不是碘酒煙灰，亦不是石南煙燻，唔&#8230;.所有謎底已經解開了!</p>

<p>I now introduce an Island malt of  Dun Bheagan Regional Malt Collection.</p>
<p>Dun Bheagan Island 8 years, 700 ml, 43%</p>
<p>Obviously the bottler did not mention about the distillery but it should be easier to guess its origin for this bottling. Firstly it won&#8217;t be an Islayer. Assumed that it is of standard favour of the distilleries, It will not from  Arran, Jura or Tobermory of Mull if it tasted oceany. That the candidates might be from Talisker, Ledaig of Mull and Highland Park.</p>
<p>Let&#8217;s taste and guess for fun!</p>
<p>Nose: Sea ​​breeze, seaweed, hay, vanilla, honey for BBQ<br />
Palate: Sea salt, smoked fish, vanilla, caramel<br />
Aftertaste: A bit short, sea salt, smoked oyster, charcoal<br />
Comment: Full of ocean smell, somehow feeling BBQ by the coast. Light body, simple but still taste of seafood. A bit short length aftertaste, smoked seafood lasting. A bit simple overall, good on nose, short but attractive aftertaste, good for just an eight years old whisky. Hmmmm&#8230;..it is of oceany favours, neither peaty iodine nor smoking heather, yes, I know where is it from!</p>
<p>(Come on silly, there are tons of information about its origin on the Internet. Stop playing the whisky master game, OK?)</p>

<p>Talisker 2002/2013 Distillers Edition TD-S:5PB Amoroso Sherry Finish 45.8%</p>
<p>此乃2002蒸餾年版本，2013年裝瓶11年陳，一如往年推出的以Amoroso Sherry Finish和Talisker招牌式45.8%酒精度。</p>
<p>氣味先以檸檬皮主導，繼而是雪莉風格的蜜餞、紅莓，後段帶輕微泥煤、咸肉和傢具地板的蠟味。口感是蜜糖、蘋果、蜜餞、黑朱古力，具煙燻感而焦香，中等偏厚帶油性酒體。餘蘊中等偏長，甘草和焦香多士，煙燻感再多一點。又一款打破年份迷思的上佳之作。</p>

<p>Sipping Malt 的酒評中, 愛倫島 Island of Arran 威士忌的酒評不多, 但其實我於不同的場合中, 嘗試過超過十款的 Arran 威士忌, 包括多種的桶陳, 如 Amarone, St. Emillion, Pomerol, Madeira, Moscatel 及 Pinot Noir 等, 細數之下, 竟然未有喝過標準入門版。標準入門版應該是酒廠展示其基礎風格的酒款, 必定要一嘗。</p>
<p>Arran 10 years, 700 ml, 46%</p>
<p>十年酒基本酒款也以 ABV 46% 高度數裝瓶, 有誠意。</p>
<p>氣味: 啡糖，奶油，青草，拖肥，消化餅<br />
口味: 咖啡，奶油，曲奇餅，多士，焦糖，丁香<br />
餘蘊: 中等長度，咖啡渣，木質單寧<br />
結論: 甜點的香甜，不過膩，很香的奶油，一抹的青草帶來清新氣息。中等酒體，沒有氣味上的甜，多了些烘焙的味道，有些丁香類的辛香料。中等長度的餘蘊，帶點乾的木質單寧，適度。以十年陳的酒來說，絕對是交足功課有餘，豐滿，直接，沒有太多的稜角，好喝，飲得過。</p>

<p><strong><span style="color: #ff0000;">English Version</span></strong> of Tasting Note</p>
<p>There are only a few tasting notes about Arran whisky in Sipping Malt. In fact I did have tasted more than a dozen of different Arran malts in some tasting events, including some casks&#8217; aged or finishing drams, such as Amarone, St. Emillion, Pomerol, Madeira, Moscatel and Pinot Noir but surprisingly I do not have tasted its standard basic bottling which should be a window of the distillery to demonstrate its fundamental style.</p>
<p>Arran 10 years, 700 ml, 46%</p>
<p>It looks very promising that a basic whisky is bottled at high proof of ABV 46%.</p>
<p>Nose: Brown sugar, cream, grass, toffee, digestive biscuit<br />
Palate: Coffee, cream, cookie, toast, caramel, clove<br />
Aftertaste: Medium length, coffee grounds, woody tannins<br />
Conclusion: Sweetness of dessert, not excessive, lovely cream, refreshing grass. The dram at palate is lesser sweet on nose, much more baking, and some clove-like spicy. Medium length aftertaste, dry woody tannin, comfortable. It is a good whisky for a 10 years old standard bottling, rich, straight, rounded, noting to complain at this class of whisky and price tag.</p>

<p>Talisker 的風格，眾所周知是厚重的海洋和燃燻味道，但原來 Talisker 於 1928 年之前，是和傳統的低地酒廠一樣，是採用三重蒸餾的，理論上酒體會較純淨雅淡，和今天的 Talisker 相差很遠，這對我們於 Talisker 一向的印象真是大相逕庭。</p>
<p>還是說回現在式的 Talisker，雖則 Talisker 也算是重口味，但同樣是海島風情，比起 Islay 的 Ardbeg，Lagavulin 和 Laphroaig 等，Talisker 其實是頗為收斂的。有說過潮流興泥煤，就算不喜歡泥煤風味，要入流要成為達人，就要自拍一張 Islay 的酒，然後在面書上說"Islay 的泥煤才是威士忌的王道"才成。如果是在酒聚上奉上 Islay 泥煤威無法推掉，抿著鼻子也要灌下去還要直豎拇指說超讚。達人，就是這樣練成的(這只我在香港觀察到的部份港燦現象，真達人無雙的請勿誤會，認真的說)。</p>
<p>時尚泥煤煙燻味，吹入尋常百姓家。現在連調合威士忌也要玩泥煤，且看看經典的<a title="被遺忘了的美味 (警告: 內有可能得罪各級威士忌達人成份，敬請留意)" href="http://www.sippingmalt.com/2011/01/14/johnnie-walker-black-label-12-years/" target="_blank">黑牌威</a>也有要 <a title="時尚泥煤煙燻味，吹入尋常百姓家" href="http://www.sippingmalt.com/2011/11/01/johnnie-walker-double-black/" target="_blank">Double Black</a>，Edrington 的雀威也來隻 Black Grouse。身為海島單一麥芽威士忌的 Talisker，本身已算重口味的還要加料，於去年 2013 年初推出了無陳年標示的 Talisker Storm，說是煙燻加強版。然後於同年六月推出了免稅店發售的 Dark Storm，使用了重度烤炙的木桶陳年。泥煤煙燻的風潮，是市場營銷的王道，還是對飲家品味美酒的風暴？</p>
<p>Talisker Storm 未有機緣喝到，還是先嚐嚐免稅店版的重度烤炙木桶陳年的 Dark Storm 吧。</p>
<p>Talikser Dark Storm, 1 ltr, 45.8%</p>
<p>氣味: 蜜餞，拖肥，煙燻，鹽焗果仁，枯葉<br />
口味: 焦糖，煙燻，炭燒咖啡，藥草，薄荷<br />
餘蘊: 中等長度，甘草，煙燻，紅糖<br />
結論: 很濃重的煙燻氣味，甜甜蜜餞及拖肥，甘香的焗果仁，點點枯葉的氣息。中等酒體，還是很重的煙燻，甘苦炭燒咖啡和藥草，未有一抹薄荷的清涼感。中等長度的餘蘊，還是煙燻，很喜歡那甘涼的甘草。這款酒從頭到尾都很重煙燻，稍欠細節，但某些味道很吸引，如口味的薄荷和餘蘊點甘草，有濃煙中吹進來的一陣清風，好喝，但我還是較喜歡基本版的十年陳，飲得過。</p>

<p>前文簡略介紹過 Talisker 的歷史，亦分享了一款 <a title="大力斯可 Talisker" href="http://www.sippingmalt.com/2014/03/03/talisker-2000-de/" target="_blank">Talisker Distillers Edition</a> 酒款的品飲報告，我今天要介紹的另外一款 Talisker ，是二十五年的陳釀。</p>
<p>相比起其他品牌，Talikser 的高年份瓶裝算是很近期才見於市場，Talisker 的 <a title="一膽拖五腳" href="http://www.sippingmalt.com/2010/09/28/talisker-18-years/" target="_blank">18 年陳</a>和現在要介紹的 25 年陳同是於 2004 年才開始推出市面。除了傳說中的八年陳，在 2004 年前賣的，都是約十年陳的酒款。現在經典的<a title="不管新酒還是老酒，好喝的就是好酒" href="http://www.sippingmalt.com/2010/11/18/talisker-10-years/" target="_blank">十年陳</a>，也是 1988 年才推出，就算是前文於 1998 年開始售賣的 Distillers Edition，也只是十至十二年陳的酒。雖則陳年不是一切，但在市場競爭上，連 18 年陳這大多數品牌的王牌級別，Talisker 也要 2004 年才開始。這一方面這是 Diageo 的 Johnnie Walker 對 Talisker 原酒需求的殷切，無多餘老酒作瓶裝，另一方面這可以看成是酒廠對酒質的堅持和信心。當然，在商就要言商，Taliser 於 2006 年也推出了 30 年陳的超高級酒款了。但 Talisker 對很多的粉絲來說，十年陳還是他們心中的經典。</p>
<p>Talisker 25 years, Release 2009, 700 ml, 54.8%</p>
<p>氣味: 海風，蜜餞，燻魚，衣櫃，煙燻<br />
口味: 海鹽，煙燻，烤木頭，咖啡，柑橘皮，舊蜜糖，濕紙皮，丁香<br />
餘蘊: 中等長度，海水，咖啡渣，焦糖，淡淡的碘酒<br />
結論: 氣味不算濃郁，但堅實，和熙的海洋氣息，頗明顯的煙燻氣味。酒體結實，頗鹹，亦重煙燻。中等長度的餘蘊，延續海洋氣息。以二十五年陳的酒來說，氣味不算複雜，但口味甚佳，雖稍鹹稍煙，但沒有過火位，全面地展現海島威士忌的風格，正斗之作。</p>

<p>大力斯可 Talisker 我只喝過其<a title="不管新酒還是老酒，好喝的就是好酒" href="http://www.sippingmalt.com/2010/11/18/talisker-10-years/" target="_blank">十年陳</a>和<a title="一膽拖五腳" href="http://www.sippingmalt.com/2010/09/28/talisker-18-years/" target="_blank">十八年陳</a>，印象非常好。Talisker 斯凱島 Isle of Skye 上的唯一酒廠，我之前只是提及過 Talisker 於  Diageo 的地位和於 Johnnie Walker 的關係，未有介紹過酒廠的資料，那就現在作一簡介吧。</p>
<p>Talisker 於 1830 年由兩兄第 Kenneth and Hugh MacAskill 建立，於翌年投產，其後廿多年無風無浪，直至 1848 年按了給  North of Scotland Bank。銀行當然無興趣釀酒，酒廠於 1857 年以五百磅的低價賣了給 Donald McLellan。Talisker 於當奴先生的營運下沒甚起色，於是數年後加入了 John Anderson。當奴先生除了營運上有困難，他還"拋空"威士忌，無貨之下賣酒，結果啷噹入獄。在他入獄後由 Roderick Kemp 和 Alexander Grigor Allen 接手，Roderick 於 1892 年將股份賣出，籌旗買下 Macallan。Talisker 的股權隨後還有更替，一直到 1916 年 DCL(Distillers Company Limited，亦即是 Diageo 的前身)接手後才告安定，營運亦算平穩，除了於 1960 年的一場大火，停產了兩年才能重開。Talisker 於 Diageo 旗下一向受都重視，其適度的海洋和煙燻風格是 Johnnie Walker 的風味來源之一。</p>
<p>前文提及過 Talikser 是 Diageo 於 1988 年定下的 Classic Malts 的第一批成員， Classic Malts 的成員由一九九五年開始各自發行 Distillers Edition (DE) 版本，這些特別版都是一些揀手或有特色的桶藏，以記年的限量瓶裝發售，就如以下介紹的一款 Talisker DE 瓶裝。</p>
<p>Talisker 2000 Distillers Edition, TD-S: 5NZ, Amoroso Finish, 700 ml, 45.8%</p>
<p>這款 DE 是 Talisker 於 2000 年蒸餾，於 2011 年裝瓶，是較為年輕的酒款。這款酒用以過桶的酒桶， Amoroso 這較為少見的名字，其實 Amoroso 是加甜 Oloroso 的其中一種 ，現在普遍稱為 Cream Sherry。</p>
<p>氣味: 杏脯，葡萄糖，橙皮果醬，拖肥，煙燻，木頭，淡海風<br />
口味: 咖啡，柑橘皮，煙燻，肉桂，冰糖，微鹹<br />
餘蘊: 中等長度，黑朱古力，焦木，焦糖，海水<br />
結論: 起首頗甜，煙燻隨之而來，有杏脯及果醬的香氣，後來的是乾木頭的氣味，但很快消失，繼後是葡萄乾及拖肥。中等酒體，咖啡及柑橘皮的甘苦，很結實的煙燻，香料隨後，有清潤的冰糖，一抹的海水。中等長度的餘蘊，黑朱古力的甘苦，焦木的焦香，不過火。氣味不算濃，起初氣未有點封閉，要點時間打開。以 ABV 45.8% 的酒精度來說，酒體算是中等厚度，但柔順，味道不算太複雜，但平衡，尤其是煙燻的味道，恰到好處。餘蘊亦是甘苦適度，舒適。好喝，易飲，平衡，雖沒驚喜，但四平八穩，結實平整，好酒。</p>
