老酒則受木桶的影響較深，加強因應木桶的種類所釋出的成份賦與威士忌不同的風味，味道層次較深，變化較大

兩者也有不同的風味，愛酒之人不應分薪舊，喝不同風格的酒也是品酒的樂趣之一，當然老酒價錢一定會比新酒貴的了。
